- 3 tablespoons all-purpose flour
- 1-1/2 teaspoons salt
- 1/8 teaspoon pepper
- 2 cups milk
- 1 cup (4 ounces) shredded cheddar cheese
- 5 cups thinly sliced peeled potatoes (about 6 medium)

- For the CRUST mix together:
- 1 cup Butter, slightly softened
- 1/2 cup Powdered Sugar
- 2 cup Flour
- Dough will be crumbly, not sticky. Spray sides only of a cookie sheet & press dough in. BAKE 350° for 15 min.
- For the FILLING beat together:
- 4 tablespoons fresh lime juice
- Grated rind of 2 limes
- 2 drops green food coloring
- 4 eggs
- 4 tablespoons flour
- 2 cup sugar
- 1 teaspoon baking powder
- Pour over warm crust and put back into the oven for 20 minutes. Until slightly golden on top.

Combine brown sugar, flour, nuts and butter in mixing bowl
- CRUST:
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup chopped nuts (pecans preferred)
- 1/3 stick butter -- melted (Do not omit or reduce this amount)
- Sweet Potato Mixture:
- 3 cups mashed sweet potatoes (Garnets looks best and I bake mine first)
- 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 2 eggs -- well beaten
- 1 stick butter -- ( 1/2 cup) melted (You can leave it out or reduce it, if you wish)

- 4 cloves roasted garlic, smashed up
