Kale Salad with Pomegranate, Orange and Pine Nuts

Cut or tear kale into bite sized pieces and place in a large zip-top bag
- 1 bunch kale leaves, stems and tough sections removed
- 1 cup pomegranate arils
- 2 navel oranges
- 1/4 cup pine nuts
- reserved juice from the oranges, or about 1/4 cup
- 2 tablespoons white wine vinegar
- 6 tablespoons extra virgin olive oil
- 1 tablespoon honey
- salt and pepper to taste
Summer Recipe: No-Bake Strawberry Icebox Cake

Take out a few of the best-looking strawberries and set them aside for the garnish
- 2 pounds fresh strawberries, washed
- 3 1/4 cups whipping cream, divided
- 1/3 cup confectioners sugar
- 1 teaspoon vanilla
- 1/2 teaspoon rosewater (optional)

Prosciutto-Wrapped Shrimp with Bourbon Barbecue Sauce

MAKE THE BARBECUE SAUCE In a medium skillet, heat the olive oil
- 1 tablespoon extra-virgin olive oil
- 1 medium onion, halved and thinly sliced

- 2 tablespoons bourbon
- 2 tablespoons brown sugar

- 1/2 cup prepared barbecue sauce, preferably a less sweet brand
- Dash of Worcestershire sauce
- Dash of hot sauce
- Salt
- Freshly ground black pepper
- 24 extra-large shrimp, shelled and deveined
- 1 tablespoon extra-virgin olive oil

- Freshly ground black pepper
- 12 slices of prosciutto, halved lengthwise
- 2 tablespoons chopped flat-leaf parsley

Crockpot Paleo Minestrone Soup

Instructions Place the olive oil in the bottom of the crock pot
- 2 Tbsp Olive Oil
- 1 Yellow Sweet Potato, diced
- 1 cup Carrots, diced
- 2 Celery Stalks, diced
- 2 Zucchini Squash, diced
- 2 Shallots, diced
- 2 cloves Garlic, minced
- 28 oz Chicken or Vegetable Broth
- 28 oz can Diced Tomatoes w/ Juice
- 1/2 cup Frozen Spinach -or- 1 cup packed Fresh Spinach, chopped

Remove kale leaves from their rough center stalk and coarsely chop
- 1 heaping cup spinach leaves
- 1 heaping cup chopped kale leaves
- 1/2 pear
- 1 frozen banana
- 1 1/2 cups cold almond milk (or soy milk or orange juice)
- 1 tablespoon honey
