In a skillet, saute potatoes, ham and onion in oil for 10 minutes or until potatoes are tender
- 2 cups frozen shredded has brown potatoes
- 1 cup chopped fully cooked ham
- 1/2 cup chopped onion
- 2 Tbsp. vegetable oil
- 6 eggs
- salt and pepper to taste
- 1 cup (4 oz) shredded cheddar cheese

Chicken and Corn Pies with Cornbread Crust

Preheat oven to 375 degrees
- 1 (10 oz) can enchilada sauce
- 1 (10 oz) can Mexican diced tomatoes with lime juice and cilantro, drained
- 2 cups frozen while kernel corn
- 1 tea. chile powder
- 3 cups chopped cooked chicken
- 1 (6 oz) pkg. Mexican-style cornbread mix
- 2/3 cup milk
- 1 egg
- 2 Tbsp. vegetable oil
- 1 cup (4 oz) shredded Mexican four-cheese blend, divided
Chicken with Creamy Dijon Herb Sauce

Mix broth, mustard, cream cheese and herbs until well blended, set aside
- 1/2 cup chicken broth
- 6 Tbsp. Dijon mustard
- 1/3 cup cream cheese spread, softened
- 1 Tbsp. minced herbs (parsley, basil or chives)
- 1 Tbsp. oil
- 4 - 6 oz - boneless chicken breasts
- 1 tea. minced garlic
Pancakes with Twinkies

Slice each Twinkie crosswise into 8 thin slices
- 6 Twinkies
- 4 cups prepared pancake batter

Place pureed blueberries in slow cooker and turn to low

- zest from 1 lemon
- 1 1/2 - 2 cups sugar

- 1 lb. peaches or nectarines, pitted and sliced

- 1/2 cup blueberries

Spanish Rice

Place rice, oil, onion, and garlic in skillet and brown
- 1 cup rice
- 2 Tbsp. oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (16 oz) can stewed tomatoes, chopped
- 1 (14 oz)can beef broth
- salt and pepper
- 1/2 tea. cumin
Dessert - Mixed Berry Hobo Packs with Grilled Pound Cake

Directions 1. Light a grill
- 1 . 1 pound mixed strawberries and blueberries, strawberries halved or quartered if large (3 cups)
- 2 . 1 teaspoon finely grated lemon zest
- 3 . 1 tablespoon lemon juice
- 4 . 1/4 cup sugar
- 5 . 3/4 teaspoon cornstarch
- 6 . 2 tablespoons unsalted butter, softened
- 7 . Four 12-inch squares of heavy-duty aluminum foil
- 8 . Four 1/2-inch-thick slices of pound cake
- 9 . Créme fraîche or vanilla ice cream, for serving
