Raspberry Vinaigrette Salad Dressing

This is a variation on a recipe my mother made during my entire childhood
- 1/2 cup extra virgin olive oil
- 1/2 cup balsamic vinegar
- 1/4 teaspoon basil (fresh, minced)
- 1/4 teaspoon oregano (fresh, mined)
- 1/4 teaspoon thyme (fresh, minced)
- 1/4 teaspoon rosemary (dried, crushed)
- 15 raspberries (more are optional)

- 1 large (118g) chicken breast, boneless and skinless
- 1 slice (28g) ham
- 14 thin slices (28g) pepperoni
- 2 ounces (56g) raw italian sausage (recipe)
- 1/4 cup (25g) parmesan (reggiano) cheese, grated
- 1/4 cup (28g) whole milk, low moisture mozzarella, grated
- 4 slices (100g) raw bacon
- salt and fresh cracked pepper, to taste
Crispity Hazelnut-Parmesan Cracker

Preheat oven to 275 F. Combine ingredients in a bowl, and mix until a ball of dough has formed
- 1 cup (112g) hazelnut flour
- 1/2 cup (50g) parmesan (reggiano) cheese, grated, densely packed
- 1 each (33g) egg white
- 2 each (6g) garlic cloves, minced
- 2 tsp (2g) fresh oregano (thyme, rosemary, sage and/or marjoram), rough chop
- salt, pepper and chili flakes, to taste

Instructions Add the eggs to a bowl and whisk until frothy
- 2 large eggs, room temperature
- 20 drops red or green food coloring (optional)
- 1 cup sugar substitute (We use Splenda)
- 1 1/2 cups almond flour from blanched almonds (ground almonds)
- 1/8 teaspoon salt (pinch)
- 1 tablespoon butter softened to room temperature (May use butter alternative)

In a medium bowl, mix the flax meal, coconut flour, sweetener, baking powder, cinnamon, and salt
- Cinnamon Topping:
- 1/2 cup golden flax seed meal
- 1/4 cup coconut flour
- 1/4 cup granular erythritol (or equivalent sweetener)
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 3 eggs
- 1/4 cup water
- 2 tbsp mild oil (grapeseed is good)
- 1 tsp vanilla or vanilla butter nut flavoring
- 1/4 cup granulated erythritol (or equivalent sweetener)
- 2 tbsp butter, melted
- 1 tsp cinnamon
- 7 drops cinnamon oil
- Glaze:
- 1/4 cup powdered sweetener
- 2 tsp butter melted
- 2 tbsp water, or less

This is my compromise version of a low carb recipe to satisfy my carb loving hubby
- 2 tsp. chicken bouillon (or 2 cubes crushed)
- 1/2 tsp. garlic salt
- 1/2 tsp. curry powder
- 1/2 tsp. salt
- 1/8 tsp. white pepper
- 1 c. grated cauliflower
- 2 tbsp. water
- 1/4 c slivered almonds
- 1 tbsp. butter
- 1 c. cooked long-grain white rice
- 1/4 c. butter

- 21/4 cups Gluten-Free Bake Mix 2 (560 mL)
- 3/4 tsp salt (3 mL)
- 1 cup unsalted butter, softened (250 mL)
- 3 oz cream cheese, softened (90 g)
- Sugar substitute with bulk* to equal
- 1 cup sugar (125 mL)
- 2 eggs
- 11/8 tsp unflavored gelatin (5.5 mL)
- 1/2 tsp orange extract (2 mL)
