HCG FRIENDLY CRAB CAKES

- Directions:
- 100 g crab meat
- 1 Grissini (ground into powder)
- 1 tsp parsley
- 1/2 tsp tarragon
- 1/2 tsp paprika
- 1/2 tsp lemon juice
- 1/4 tsp cayenne
- 1/4 tsp white pepper
- 1/4 tsp dry mustard
- 1/4 tsp seafood seasoning (optional)
- ●Grind grissini into powder and place in a small dish.
- ●In a bowl, combine crab meat and remaining ingredients. Mix well and form into patties.
- ●Coat each side of patty w/ grissini powder.
- ●Brown in a non-stick skillet over MED heat for 3 mins each side, or place on George Foreman for 4-5 mins.

- 2 2 2 teaspoons baking powder
- 1/2 1/2 1/2 teaspoon salt
- 1 1/2 1 1/2 1/2 tablespoons all-purpose flour
- 1 1/2 1 1/2 1/2 cups fresh blueberries
- 1/2 1/2 1/2 cup butter
- 3/4 3/4 3/4 cup white sugar
- 2 2 2 eggs
- 1 1 1 teaspoon vanilla extract
- 1/4 1/4 1/4 teaspoon lemon zest
- 1/2 1/2 1/2 cup milk
- 2 2 2 tablespoons all-purpose flour
- 5 5 5 tablespoons white sugar
- 1/2 1/2 1/2 teaspoon ground cinnamon
- 2 2 2 tablespoons butter, diced
- Directions
- to 375 12 375 degrees F. Grease 12 muffin cups or line with paper muffin liners.
- 2 2 1/2 1 to 2 baking powder, and 1/2 teaspoon salt in medium bowl. In a small bowl, sprinkle 1 to 2 tablespoons flour over blueberries, and set aside. (This simple trick will keep you from having "purple" batter)
- 2 5 1/2 2 5 tablespoons sugar ,and 1/2 teaspoon cinnamon in a small bowl. Cut in 2 tablespoons butter with fork or pastry blender until mixture resembles course crumbs. Sprinkle over batter in muffin cups.
- 20 to 25 preheated oven for 20 to 25 minutes, or until a toothpick inserted in center of a muffin comes out clean. Cool in pans on wire rack. These muffins freeze really well, and re-heat in the microwave successfully. Hope you enjoy!!

- 1 package (18-1/4 ounces) yellow cake mix
- 1-1/4 cups 1% buttermilk
- 4 egg whites
- 1 egg
- 1 package (8 ounces) reduced-fat cream cheese, cubed
- 1 cup cold 2% milk
- 1 package (1 ounce) sugar-free instant vanilla pudding mix
- 2 cans (one 20 ounces, one 8 ounces) unsweetened crushed pineapple, drained
- 1 carton (8 ounces) frozen fat-free whipped topping, thawed
- 1/2 cup flaked coconut, toasted
- ● In a large bowl, combine the cake mix, buttermilk, egg whites and egg beat on low speed for 30 seconds. Beat on medium for 2 minutes.
- ● Transfer to a 13-in. x 9-in. baking pan coated with cooking spray.
- ● Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
- ● In a small bowl, beat cream cheese until fluffy. Gradually beat in milk add pudding mix until well blended.
- ● Spread over the cake. Top with pineapple and whipped topping. Sprinkle with coconut.
- ● Store in the refrigerator.
CHINESE NOODLE SALAD

- Directions:
- 1/4 cup Oriental sesame oil
- 3 Tbs. soy sauce
- 2 Tbs. balsamic vinegar
- 3/4 lb. Chinese noodles or thin spaghetti
- 4 scallions, chopped
- 1 lb. broccoli, cut into florets
- ●Combine first 3 ingredients in a bowl and set aside.
- ●Cook noodles in boiling salted water until al dente. Drain thoroughly. Stir in scallions and set aside.
- ●Place broccoli in a steamer basket over boiling water. Cover saucepan and steam 4-5 minutes or until broccoli is tender. Drain and toss with noodles and sauce.

- 2 2 2 tablespoons chopped black walnuts*
- 1 1 1 tablespoon light butter
- 1 1 1 large ripe banana, sliced
- 1/4 1/4 1/4 cup honey
- 2 2 2 large eggs, lightly beaten
- 1/4 1/4 1/4 cup fat-free milk
- 1/2 1/2 1/2 teaspoon ground cinnamon
- 1/8 1/8 1/8 teaspoon ground nutmeg
- 8 8 8 (0.8-oz.) white bread slices
- Vegetable cooking spray
- 1/4 1/4 1/4 cup reduced-calorie maple syrup
- 1 1. 2 5 a small skillet over medium-high heat until hot; add 2 Tbsp. chopped black walnuts, and cook, stirring constantly, 5 minutes or until toasted. Remove from skillet.

- 1 1 1 cup + 1 tablespoon warm water
- 1 1/3 1 1/3 1/3 tablespoons yeast
- 4 4 4 cups flour
- 1 1/2 1 1/2 1/2 tablespoons salt
- 1 1/2 1 1/2 1/2 teaspoons malt powder (available at specialty grocery stores)
- 1 3/4 1 3/4 3/4 tablespoons olive oil
- to 4 bath (1 part baking soda to 4 parts water)
- Pretzel salt (or kosher salt)
- DIRECTIONS
- to 400 an oven to 400 degrees and oil a baking sheet with spray oil.
- 5-7 Place the yeast in a bowl of warm water and let dissolve for 5-7 minutes.
- 30 In a large bowl, mix together yeast mixture, flour, salt, malt and olive oil and let proof in a warm part of the kitchen for 30 minutes.
- 2 15 the dough has risen, make little balls, about 2 inches each, and let rest for 15 minutes more.
- 5-10 Repeat with the left hand. Place twisted pretzels onto a sheet tray and let rest 5-10 minutes more.
- 10-11 Dip the pretzels into the baking soda bath and place back onto the tray. Sprinkle the tops with pretzel salt and bake for 10-11 minutes until golden brown. Remove and enjoy.

- ½ cup chopped onion
- 2 garlic cloves, minced
- ½ cup evaporated skimmed milk
- 1 large egg, lightly beaten
- 21/4 ounces grated Parmesan cheese
- 2 cups hot cooked fettuccine
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 tablespoon chopped fresh chives
- ●To prepare yogurt cheese, set medium strainer lined with coffee filter over medium bowl. Place yogurt in lined strainer; cover and refrigerate until ½ cup yogurt cheese remains, about 5 hours. Discard drained liquid.
- ●Spray medium nonstick skillet with nonstick cooking spray; add onion and garlic; cook over medium heat until softened, about 2 minutes.
- ●Reduce heat to low; gradually (to keep mixture from curdling) whisk in milk, yogurt cheese, and egg. Add 2 ounces of the Parmesan cheese and the fettuccine; toss to combine.
- ●Cook over low heat until cheese is melted, about 1 minute.
- ●Transfer to serving dish; sprinkle with the remaining cheese, the parsley, and chives.
- MAKES 2 SERVINGS (This is enough sauce for 3-4 servings of fettuccine)

- 3 3 3 (8 ounce) packages dried corn husks
- 4 4 4 dried ancho chiles
- 2 2 2 tablespoons vegetable oil
- 2 2 2 tablespoons all-purpose flour
- 1 1 1 cup beef broth
- 1 1 1 teaspoon cumin seeds
- 1 1 1 teaspoon ground cumin
- 2 2 2 cloves garlic, minced
- 2 2 2 teaspoons chopped fresh oregano
- 1 1 1 teaspoon red pepper flakes
- 1 1 1 teaspoon white vinegar
- to to taste
- 3 3 3 cups lard
- 1 1 1 tablespoon salt
- 9 9 9 cups masa harina
- Directions
