JAM CAKE

- Cream Filling:
- 4 eggs
- 1 C. shortening or butter
- 1 ½ C. blackberry jam
- 1 C. chopped pecans
- 1 tea. cinnamon
- 1 tea. cloves
- 2 T. cocoa
- 2 C. sugar
- 1/4 tea. salt
- 1 tea. soda
- 1 C. buttermilk
- 2 2/3 C. plain flour
- ● Preheat oven to 350 degrees.
- ● Mix as any other cake and bake in layers.
- 1 C. sugar
- 5 T. milk.
- ● Boil sugar and milk for 1 minute.
- ● Beat until begins to thicken.
CARAMEL CASHEW BROWNIES

- TOPPING:
- 3/4 cup butter, softened
- 1-1/2 cups packed brown sugar
- 3 eggs
- 3 ounces unsweetened chocolate, melted and cooled
- 3 teaspoons vanilla extract
- 1-1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1-1/2 cups 60% cacao bittersweet chocolate baking chips
- 1 cup chopped cashews
- 16 caramels
- 3 tablespoons 2% milk
- Directions
- ● In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in chocolate and vanilla.
- ● Combine flour and salt; gradually beat into creamed mixture just until moistened. Stir in chocolate chips.
- ● Pour into two greased 9-in. square baking pans. Sprinkle with cashews.
- ● Bake at 325° for 20-25 minutes or until a toothpick inserted near the center comes out with moist crumbs (do not overbake). Cool on wire racks.
- ● In a small saucepan, combine caramels and milk. Cook and stir over medium-low heat until caramels are melted. Drizzle over brownies.
EASY CHOCOLATE CAKE

- Frosting:
- Cake
- 2 C. sugar
- 2 C. sifted flour
- 1 C. water
- 2 sticks oleo
- 1 tea. vanilla
- 4 T. cocoa
- 2 eggs
- 1 tea. soda
- ½ C. buttermilk
- 1 stick margarine
- 4 T. cocoa
- 1/3 C. milk
- 1 C. pecans
- 1 box powdered sugar
- 1 tea. vanilla
- Cake
- ● Combine sugar and flour.
- ● Dissolve soda in buttermilk.
- ● Combine water, oleo, an cocoa and bring to a boil.
- ● Add to sugar-flour mixture and mix well.
- ● Add eggs, buttermilk and vanilla.
- ● Pour in a 6"x12" greased and floured pan.
- ● Bake at 350F for 30 min.
- Frosting
- ● Bring margarine, cocoa and milk to a boil.
- ● Remove from heat and blend in sugar, nuts and vanilla.
- ● Spread when smooth.

- Directions:
- 1 1 1 clove garlic, pressed
- 1/4 1/4 1/4 cup butter, softened
- 2 2 2 skinless, boneless chicken breast halves
- 1/2 1/2 1/2 cup all-purpose flour
- to and ground black pepper to taste
- 4 4 4 ounces sliced mushrooms
- 20 20 to capers, or to taste
- 2 2 2 tablespoons lemon juice
- 1/4 1/4 1/4 cup white wine
- 2 2 to tablespoons chicken-flavored demi-glace, or to taste
- 1 1 to teaspoon chopped fresh parsley, or to taste
- 2 2 2 lemon slices
- ●In a small bowl, stir together the garlic and butter until well combined. Set aside.
- ●Place the flour into a shallow dish, and dredge each chicken breast on both sides with flour.
- to and stir the mushrooms in the same skillet as the chicken until the mushrooms have absorbed the remaining butter in the skillet and have begun to turn brown at the edges.
- to to capers, lemon juice, white wine, and chicken demi-glace, and stir to combine. Reduce to a simmer. Adjust salt and pepper again, and stir the parsley into the sauce.

- 5 cups all-purpose flour
- 4 tablespoons white sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 1/2 cups shortening
- 2 egg yolks
- Directions
- ●Combine flour, sugar, salt, and baking powder. Cut in Crisco until pea sizes form.
- ●In one-cup measuring cup, beat egg yolks and add COLD water to fill entire one cup. Add to the mixture. Do not over mix. Divide into thirds.

- 3 tablespoons minced garlic
- 1 tablespoon ground black pepper
- 1/4 cup Worcestershire sauce
- 1/3 cup brown sugar
- Directions
- ● In a large bucket or container large enough to hold your turkey, mix together the water, salt, garlic, pepper, Worcestershire sauce and brown sugar.
- ● Store in a refrigerator, and soak turkey for 2 days before smoking or roasting.

- 1 cup canned plums, drained
- 1/4 cup all-purpose flour
- 1/4 cup sugar
- 1/8 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1/4 cup cold butter, cubed
- 1/2 cup crushed cornflakes
- Half-and-half cream, optional
- ●Cut the plums in half; discard pits. ●Divide equally among four well-greased 6-oz. custard cups.
- ●In a bowl, combine the flour, sugar, salt and nutmeg; cut in butter until mixture is crumbly. Stir in cornflakes; sprinkle over plums.
- ●Bake at 350 degrees for 40 minutes or until the topping is golden brown.
- ●Serve warm with cream if desired.

- 1 lb ground beef
- 1 egg, beaten
- 1/2 c. frine dry bread crumbs
- 1 t. salt
- 1/8 t. pepper
- 1 clove garlic, quartered
- 2 t. oil
- Sauce:
- 1 c. Coca Cola
- 1/4 t. dry mustard
- 2 T. ketchup
- 1/8 t. black pepper
- 1 T. vinegar
- 1 T. soy sauce
KENNY'S MILLIONAIRE GRAVY

- Directions:
- 1 lb pork sausage
- 2-3 T. flour
- 1 pt. half and half divided
- Fry sausage and remove to another dish, reserving drippings.
- Stir flour in drippings, then add 1/2 pint of half and half and let simmer to make a white roux.
- Mix sausage into white roux.
- Add remaining pint of half and half to desired consistency; simmer slowly.
