Bisquick Waffles

- 2 c bisquick
- 1 egg
- 3 tlb oil
- 10 oz club soda
Veggie Burgers

In a large skillet heat 1 tablespoon of olive oil over medium high heat
- 3 Tablespoons olive oil
- 3/4 cup of corn
- 6 mushrooms, finely chopped
- 2 scallions, finely chopped
- 1/2 red bell pepper, finely chopped
- 1 garlic clove, minced
- 1 teaspoon of cumin
- dash of cayenne pepper
- 1/2 cup of chopped fresh spinach
- 1 Carrot grated
- 1 Small potato, peeled and grated
- 1 egg white
- salt and pepper
- 1/2 cup of fresh bread crumbs
- 1 cup plain yogurt
- 2 tablespoons freshly chopped mint
- yogurt and mint optional
Beth's Oriental Shrimp and Pasta Salad

- 1 1/2 pounds baby shrimp, peeled and deveined
- 3/4 pound linguine, cooked al dente and drained
- 1 bunch green onions, chopped
- 2 cup water chestnuts, rinsed, dried and sliced
- 1/4 cup sesame seeds, toasted
- 3 cups sliced radishes
- 1/4 pound snow peas, blanched for 30 seconds and refreshed
- 1 tablespoon minced fresh ginger
- 1 tablespoon minced garlic
- 1/4 cup sesame oil
- 1/4 cup sake
- Juice of 3 oranges
- 2 tablespoons honey
- 2 tablespoons white vinegar

Turkey Lettuce Wraps

For the filling: Brown the turkey in the oil in a large saute pan over medium-high heat until no longer pink
- FILLING:
- 12 ounces ground turkey
- 2 teaspoons vegetable oil
- 8 ounces white mushrooms, chopped
- 3 scallions, chopped
- 2 cloves garlic, minced
- One 6-ounce can water chestnuts, chopped
- 1/4 cup soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon rice wine vinegar
- ADD:
- Ginger
- Lemongrass
- Cilantro
- Peanuts (at end)
- DRIZZLING SAUCE:
- 3 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard or spicy mustard
- 1 tablespoon Sriracha sauce
- 1/2 teaspoon sesame oil
- ADD:
- Ketchup
- Chili Sauce
- 8 to 12 large iceberg lettuce leaves, cleaned and dry
- Shredded carrots, for serving
- Bean sprouts, for serving
- Chopped fresh cilantro, for serving

Fudgy Chocolate Raspberry Cake

Preheat oven to 350 F. Butter and flour a 9" round cake pan or spring form pan
- 1 Cup + 2 Tbsp. Cocoa Powder
- 2 Cups + 2 Tbsp. white sugar
- 2 3/4 sicks unsalted butter
- 1/2 cup Stonewall Kitchen Red Raspberry Jam (strained optional) or Seedless Raspberry Jam
- 4 large eggs
- 1 cup all purpose flour
- 1 tsp. Vanilla
- 1/4 tsp. salt

1. Alternate the cubes of swordfish and pineapple on 4 wooden skewers
- Marinade:
- 1 1/2 pounds swordfish steaks, cubed
- 1 large pineapple, peeled, cored and cubed
- 1/2 cup (1 stick) butter
- 1/2 cup white wine vinegar
- juice of 1 lime
- 1 small white onion chopped
- 1/2 green pepper, seeded and chopped
- 2 cloves garlic
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon sweet paprika
- 1 teaspoon ground coriander
