In a mixing bowl, cream butter and sugars
- For the Cake:
- 1 1 1 cup butter or margarine, softened
- 1 1 1 cup sugar
- 1 1 1 cup packed brown sugar
- 4 4 4 eggs
- 2 2 2 tablespoons grated lemon peel
- 2 2 2 tablespoons grated orange peel
- 3 3 3 cups all-purpose flour
- 2 2 2 teaspoons baking powder
- 1 1 1 teaspoon baking soda
- 1 1 1 teaspoon ground cinnamon
- 1/2 1/2 1/2 teaspoon salt
- 2 2 2 tablespoons orange juice
- 2 2 2 tablespoons lemon juice
- 1 1 1 pound carrots, grated
- 1 1 1 cup raisins
- 1 1 1 cup chopped pecans
- For the Frosting:
- 1 1 1 package (3 ounces) cream cheese, softened
- 1 1/2 to 2 1 1/2 to 2 2 cups confectioners' sugar
- 1 1 1 teaspoon vanilla extract
- 1/2 1/2 1/2 cup chopped pecans
