- 30 squares gingersnap cookies
- 6 tablespoons (3/4 stick) unsalted butter, melted

- 1 lemon, sliced
- 1 cup white long-grain rice
- 2 tablespoons EVOO – Extra Virgin Olive Oil
- 3 to 4 cloves garlic, finely chopped
- 3/4 to 1 pound farm spinach, stems trimmed and chopped
- 1 quart chicken stock-in-a-box
- 2 to 3 large eggs
- 1/3 cup cream or milk
- A few grates of nutmeg
- 1/2 cup grated Parmigiano-Reggiano cheese, a couple of handfuls

- 2 teaspoons sesame oil
- 1 tablespoon low sodium soy sauce
- 1 teaspoon ground ginger
- 1 teaspoon natural peanut butter
- 1/4 teaspoon ground red pepper
- 1 tablespoon sesame oil
- 3/4 cup diced celery
- 3/4 cup thinly sliced onion
- 3/4 cup diced red bell pepper
- 4 skinless and boneless chicken breasts, cut into bite sized pieces
