- Topping ingredients:
- 1 1/2 1 1/2 1/2 lbs. cubed and peeled Yukon gold or russet potatoes
- 1 1 1 tsp. salt
- 1/2 1/2 1/2 cup soy or almond milk
- 1/4 1/4 1/4 tsp. smoked paprika (or regular paprika)
- Directions for topping:
- 1 to 20 saucepan cover the potatoes with water and add 1 tsp. salt. Bring water and potatoes to a gentle boil and cook until potatoes are tender – about 20 minutes.
- Filling Ingredients
- 1 1 1 cup Puy lentils
- 4 4 4 cups water
- 1/2 1/2 1/2 tsp. salt
- 1 1 1 bay leaf
- 1 1 1 T. olive oil
