- 2 ounces of stale Italian bread
- 2 eggs
- 3 tablespoons pecorino-romano cheese, freshly grated
- 1 clove garlic, finely minced
- 1 bunch Italian parsley, chopped to yield 1/4 cup
- 1/2 cup bread, crumbs
- 3 ounces of caciocavallo cheese (stringy Italian semi-soft cheese)
- 1/2 cup tomato sauce
- 1 cup extra-virgin olive oil, for frying

- 2 tablespoons extra-virgin olive oil, plus more for pan
- 4 (5-ounce) skinless wild Alaskan salmon fillets
- Coarse salt
- 1/4 cup slivered almonds
- 1 tablespoons fresh lime juice
- 1/4 cup plus 1 tablespoon lowfat plain Greek yogurt
- 1/2 small shallot, very thinly sliced
- 1 cup fresh herbs, such as mint, chervil, or parsley
Tuscan-Style Tuna Salad

Combine tuna, beans, tomatoes, scallions, oil, lemon juice, salt and pepper in a medium bowl
- 2 6-ounce 2 6-ounce 6-ounce cans chunk light tuna, drained (see Note)
- 1 15-ounce 1 15-ounce 15-ounce can small white beans, such as cannellini or great northern, rinsed (see Ingredient note)
- 10 10 10 cherry tomatoes, quartered
- 4 4 4 scallions, trimmed and sliced
- 2 2 2 tablespoons extra-virgin olive oil
- 2 2 2 tablespoons lemon juice

Mix together in mixing bowl and add more water if necessary
- Ingredients: flax seeds and pure unfiltered water
- 2 cup flax seeds soaked for 5- 8 hours or overnight - not ground up or you can use 2 cups of flax seeds unsoaked ground in a food processor
- 2 tsp sun dried sea salt
- 2 1/2 - 3 cups or more of pure filtered water
Crispy Chinese Chicken Salad

Mix snow peas, carrots, cabbage, mandarin oranges, scallions, sesame seeds and romaine in a large bowl
- 1 package gardein crispy tenders (prepared as directed on the package)

- 1/2 pound snow peas, trimmed and cut in half
- 2 carrots, julienned
- 1 head Napa cabbage cut into 1/4in shred
- 1 small can mandarin oranges, drained
- 1/2 cup chopped scallions
- 2 tbsp sesame seeds, toasted
- 1 head romaine, cut into 1/4in shred
- salad dressing
- 1/4 cup soy sauce
- 1/4 cup fresh lemon juice
- 1 tbsp agave nectar
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1/4 cup safflower oil
- 2 cups wonton strips
