Crustless Almond Cheesecake Recipe

This recipe calls for almond flavoring but you can use any kind to change it up
- TOPPING:
- 1 package (8 ounces) cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 1/8 teaspoon almond extract
- 1/2 cup sour cream
- 4 teaspoons sugar
- 1/2 teaspoon vanilla extract
- Assorted fresh fruit, optional

1. Place the Italian bread shell on a baking sheet
- Prep: 12 minutes
- Bake: 12 minutes
- 1 16-ounce Italian bread shell (Boboli)
- 2 ounces fat-free cream cheese (block style) (about 2 ounces)
- 2 ounces semisoft goat cheese or feta cheese, crumbled (about 1/4 cup)
- 1 teaspoon dried basil, crushed or 2 tablespoons snipped fresh basil
- 1 clove garlic, minced
- 1/8 teaspoon ground black pepper
- 3 plum tomatoes, thinly sliced
- 1 small yellow, orange, or green sweet pepper, cut into thin bite-size strips

- 3/4 cup shelled walnuts
- 1 cup graham cracker crumbs
- 1/2 cup plus 1 tablespoon sugar, divided
- 1/2 teaspoon crushed anise seeds
- 1/4 teaspoon salt
- 1 envelope unflavored gelatin
- 1 lemon
- 1 1/2 cups skim milk
- 1 teaspoon vanilla extract
- 2 fully ripened Avocados from Mexico, halved, pitted, peeled and diced
- 8 ounces fat-free cream cheese, softened and cut in pieces
Raspberry Balsamic Vinaigrette

For this dressing, stir together all of the ingredients except the oil until well combined
- 1/3 cup balsamic vinegar
- 2 tbsp water
- 4 tsp raspberry preserves
- 1/4 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 tbsp finely chopped shallot
- 2/3 cup extra-virgin olive oil

Place peppers in an ungreased shallow microwave-safe dish
- 2 large sweet red peppers, halved lengthwise
- 1 cup canned stewed tomatoes
- 1/3 cup instant brown rice
- 2 tablespoons hot water
- 3/4 cup canned kidney beans, rinsed and drained
- 1/2 cup frozen corn, thawed
- 2 green onions, thinly sliced
- 1/8 teaspoon crushed red pepper flakes
- 1/2 cup shredded part-skim mozzarella cheese
- 1 tablespoon grated Parmesan cheese

- 5 cups water

Fresh Herb Mini Quiches

Directions Heat the oven to 400°F
- 3 eggs
- 1 cup heavy cream
- 3 tbsp. fresh chopped herbs (basil and chives)
- 2 tbsp. finely chopped shallots
- 1/4 tsp. ground black pepper
- Generous dash ground red pepper
- 1 cup finely shredded Swiss cheese (about 4 ounces)
- 1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
French Toast with Maple-Apple Compote

1. Preheat oven to 250. Place wire rack on a baking sheet and place in oven
- Compote:
- Sweet Pink Lady apples hold up well to being saut for the compote. Liberty, Fuji, or Jonagold apples would also work. Substitute Hawaiian bread if challah isn't available.
- Cooking spray
- 1 tablespoon butter
- 3 cups sliced peeled Pink Lady apples (about 1 1/2 pounds)
- 1/4 cup maple syrup
- 1/2 teaspoon ground cinnamon
- French toast:
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 cup 2% reduced-fat milk
- 2 teaspoons vanilla extract
- 1/8 teaspoon salt
- 4 large eggs, lightly beaten
- 12 (1-ounce) slices challah bread
- 4 teaspoons butter
- Powdered sugar (optional)
Guava Bars Recipe

I made these in response to a request from a Colombian coworker for "something guava"
- 1 cup packed light brown sugar
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups rolled oats
- 1 cup butter, softened
- 14 ounces cans guava paste ( more or less, depending on how thick you like your fruit layer)
