Slow-Cooker Meat Loaf with Shiitake Mushrooms

Place bread in a food processor, and pulse 10 times or until crumbs measure 1 1/3 cups
- 2 (1-ounce) slices whole wheat bread
- 3/4 pound ground round
- 3/4 pound ground turkey
- 1 1/2 cups sliced shiitake mushrooms
- 1/2 cup grated fresh onion
- 1 teaspoon dried Italian seasoning
- 3/4 teaspoon salt
- 2 large eggs, lightly beaten
- 1 garlic clove, minced
- 2 tablespoons ketchup
- 1 1/2 teaspoons Dijon mustard
- 1/8 teaspoon ground red pepper
Mellow Mai Tai

In a pitcher add the orange juice, pineapple juice, maraschino cherry juice and lime juice and stir to combine

LYNN ARCHER'S HADDOCK CHOWDER

Sauté onion, celery in the bacon grease till onions are clear, not brown
- Haddock Chowder
- 6 strips of bacon or a 3 inch square of salt pork, diced
- 1 large diced onion
- 1 cup diced celery
- 6 large diced potatoes
- 2 lbs fresh haddock
- 6 cups of half n half
- 3 tables of butter

Preheat oven 350 degrees. Line baking sheets with parchment paper and fit a pastry bag with a medium tip
- For Cookies:
- 3/4 C all-purpose flour
- 3/4 C unsweetened cocoa powder
- 1/2 tsp salt
- For Filling:
- 2 sticks unsalted butter - softened
- 2 C sifted powdered sugar
- 1/2 C granulated sugar
- 6 egg whites
- 1/4 C heavy cream
- 1/2 tsp mint extract
- 8 oz white chocolate bar - chopped
- green food coloring
Pineapple juice version of the Mai Tai

Pour all the ingredients except the dark rum into a shaker with ice cubes
- 1 ounce light rum
- 1/2 ounce triple sec
- 1/4 ounce lime juice
- 1 1/2 ounces pineapple juice
- 1 1/2 ounces orange juice
- Dash of grenadine
- 1/2 ounce dark rum
- Maraschino cherry for garnish
Stir-Fried Kung Pao Chicken with Chili Peppers

Cut the chicken into 1-inch cubes
- For the Marinade:
- 2 chicken breasts (boneless, skinless, 7 to 8 ounces each)
- 8 small dried red chili peppers
- 2 cloves garlic
- 2 green onions (spring onions, scallions)
- 4 tablespoons oil (for stir-frying, or as needed)
- Optional: 1 teaspoon Szechuan peppercorn
