WAC Lemon Cookie

- 3/4 C sifted all purpose flour
- 1/3 C butter
- 2 whole eggs
- 1 C brown sugar
- 3/4 C shredded coconut
- 1/2 C chopped nuts
- 1/8 th tsp vanilla
- Frosting
- 1 tsp. grated lemon rind
- 1 1/2 tsp lemon juice
- 2/3 C powdered sugar
Salade Nicoise ($10)

On a large platter, place the romaine lettuce and top decoratively with the rest of the ingredients
- Lemon-Olive Vinaigrette:
- 1 head romaine lettuce, cut into bite-size pieces
- 4 eggs, hard-boiled
- 2 (5-ounce) cans good quality light tuna in oil, drained
- 2 green onions, chopped
- 1 tomato, seeded and chopped
- 1/2 pound green beans, blanched
- 2 large red potatoes, cubed and boiled
- Kosher salt and freshly ground black pepper
- Lemon-Olive Vinaigrette, recipe follows
- 1 teaspoon Dijon mustard
- 1/2 lemon, juiced
- 1/2 teaspoon vinegar (recommended: white wine vinegar)
- 1/4 cup olive oil
- 1 tablespoon chopped fresh thyme
- 1/2 cup briny olives from salad bar, chopped (recommended: nicoise)
- Kosher salt and freshly ground black pepper
Barefoot Beef Stew

Place the beef in a bowl with red wine, garlic, and bay leaves
- 2 1/2 pounds good quality chuck beef, cut into 1 1/2-inch cubes
- 1 (750-ml bottle) good red wine
- 3 whole garlic cloves, smashed
- 3 bay leaves
- 2 cups all-purpose flour
- Kosher salt
- Freshly ground black pepper
- Good olive oil
- 2 yellow onions, cut into 1-inch cubes
- 1 pound carrots, peeled and cut diagonally in 1 1/2-inch chunks
- 1/2 pound white mushrooms, stems discarded and cut in 1/2
- 1 pound small potatoes, halved or quartered
- 1 tablespoon minced garlic (3 cloves)
- 2 cups or 1 (14 1/2-ounce can) chicken stock or broth
- 1 large (or 2 small) branch fresh rosemary
- 1/2 cup chopped sun-dried tomatoes
- 2 tablespoons Worcestershire sauce
- 1 (10-ounce) package frozen peas
Mushroom Pilaf (P.W.)

In a medium pan, melt the butter
- 4 tablespoons butter
- 3 cloves garlic, finely minced
- 2 medium onions, chopped
- 1 pound cremini mushrooms, roughly chopped
- 1 pound white mushrooms, roughly chopped
- 8 ounces shiitake mushrooms, stems removed, roughly chopped
- 2 cups long-grain rice
- 1/2 cup white wine
- 3 cups chicken stock
- 1/4 teaspoon turmeric
- Salt and freshly ground black pepper
- 2 tablespoons chopped fresh parsley
