Carrot Soup by Pioneer Woman

Combine the carrots, stock and thyme in a pot
- 3 pounds baby carrots or carrot chunks
- 8 cups vegetable stock or chicken stock
- 2 sprigs fresh thyme, plus leaves for garnish
- 1/3 cup honey
- 1/2 cup heavy cream
- Dash of salt and pepper
Bloody Mary Chili (PW)

In a large pot over medium heat, add some olive oil and saute the celery and onions until soft
- Ingredients
- Olive oil, for sauteing
- 2 stalks celery, finely diced
- 1 onion, finely diced
- 2 cloves garlic, chopped
- 3 pounds ground beef
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground oregano
- 15 ounces Bloody Mary mix, plus more if needed
- 1/4 cup vodka, optional
- 1 tablespoon Montreal steak seasoning
- Several dashes Tabasco, or to taste
- Several dashes Worcestershire sauce, or to taste
- One 15-ounce can kidney beans, drained and rinsed
- One 15-ounce can pinto beans, drained and rinsed
- For serving: celery sticks, carrot sticks, ranch dressing and tortilla chips
Crostini with Tuna Tapenade (Barefoot Contessa)

- 10 to 12 ounces canned or jarred Italian tuna packed in olive oil
- 2 teaspoons anchovy paste
- 1 teaspoon fresh thyme leaves
- 2 tablespoons minced fresh parsley, plus extra for garnish
- 1 tablespoon grated lemon zest
- 2 teaspoons minced garlic (2 cloves)
- 3 tablespoons freshly squeezed lemon juice
- 3 tablespoons good olive oil, plus extra for brushing bread
- 1/3 cup Italian mascarpone cheese
- 1/4 cup pitted and chopped kalamata olives
- 1 tablespoon drained capers
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 36 slices French bread, cut diagonally
Cowboy Stew

In a Dutch oven, fry the bacon until crisp over medium heat
- 6 bacon slices
- 7 small red potatoes, peeled and diced
- 1 lg onion, chipped
- 1 med green pepper, seeded and chopped
- 1 garlic clove, minced
- 1 1/2 lb ground beef
- Two 15-oz cans stewed tomatoes
- 1 11 1/2 oz can corn, drained
- One 15 1/2 oz can kidney beans, drained
- 1 T chili powder
- Salt and peper to taste
Halibut with Raw Puttanesca Salsa (Rachael Ray)

Preheat grill pan or outdoor grill to medium-high to high heat
- 4 (6-ounce) halibut fillets
- Extra-virgin olive oil, for liberal drizzling plus 1/4 cup
- Salt and freshly ground black pepper
- 4 (1-inch) thick slices crusty bread
- 1 1/2 teaspoons anchovy paste
- 2 to 3 cloves garlic, grated
- 1 teaspoon crushed red pepper flakes
- 1 lemon, zested and juiced
- 3 tablespoons capers, run your knife through them
- 1/2 cup pitted black olives, chopped
- 1/2 cup flat-leaf parsley, coarsely chopped
- 1 pint grape tomatoes, halved or cherry tomatoes, quartered
