Ingredients

  • 6 bacon slices
  • 7 small red potatoes, peeled and diced
  • 1 lg onion, chipped
  • 1 med green pepper, seeded and chopped
  • 1 garlic clove, minced
  • 1 1/2 lb ground beef
  • Two 15-oz cans stewed tomatoes
  • 1 11 1/2 oz can corn, drained
  • One 15 1/2 oz can kidney beans, drained
  • 1 T chili powder
  • Salt and peper to taste

Preparation

Step 1

In a Dutch oven, fry the bacon until crisp over medium heat. Transfer to paper towels to drain. Crumble the bacon into a small bowl and set aside, Pour off half the drippings.

Place the potatoes in a saucepan, add water to cover, and cook over heat for 7 to 10 minutes, until tender. Drain, run the potatoes under cold water to stop them from cooking further, drain again, and set aside.

Add the onion, bell pepper, garlic, and ground beef to the remaining bacon drippings in the Dutch oven adn brown over medium-high heat. Add the tomatoes. Cover and simmer over low heat for 30 minutes. Add the potatoes and other ingredients. continue simmering over low heat, uncovered, for 15 minutes or until hot. Garnish with bacon.
