Lamb Curry Supreme

  • 2 lb lamb shoulder, cut into 1" cubes
  • 1/3 cup butter
  • 1 clove garlic, crushed
  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 1/3 cup flour
  • 2 tsp curry powder
  • 1 tsp salt
  • 3 cup chicken bouillon
  • 1/2 cup chutney
  • 1 tsp mustard
  • 1/8 tsp pepper



Step 1

Brown meat on all sides in butter in large skillet. Add garlic, onion and celery. Cook 5 minutes longer. Add flour, curry powder and salt. Mix well and cook 3 minutes. Add bouillon. Cook stirring constantly, until mixture thickens. Add remaining ingredients. Cover. Simmer for 45 minutes, until tender. Serve over hot rice with 3 or more condiments: chutney, chopped nuts, shredded coconut, minced parsley, crumbled crisp bacon, thinly sliced green onions, sweet pickle relish, finely chopped hard cooked eggs, raisins.
