Ingredients

  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 1 cup powdered sugar
  • 1 1/2 cups granulated sugar
  • 1 cup canola oil
  • 2 eggs
  • 1 teaspoon vanilla extract

Preparation

Step 1

1. Sift together flour, cream of tartar, baking soda and salt
2. Combine butter, powdered sugar, and 1 cup granulated sugar in a large bowl. Beat with electric mixer. Add oil, eggs, and vanilla, mixing to combine. Gradually add flour mixture. Chill dough 3-4 hours until firm.
3. Preheat oven to 350F
4. Shape dough into walnut-size balls and roll in remaining 1/2 cup granulated sugar. Place cookies on an ungreased baking sheet. Dip the bottom of a glass in granulated sugar and press onto each ball to flatten.
5. Bake 12 minutes or until lightly browned. Remove cookies from pan and let cool on paper towels.
