Ingredients

  • 750 g lamb, cubed
  • 2 onions, roughly chopped
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 2 red chilies, finely minced (or use 2 cubes frozen red chili)
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp hot chilli powder
  • 1 tsp ground turmeric
  • 1 tbsp thickening granules (or flour)
  • 1 14 oz canned chopped tomatoes
  • 2 tsp garam masala

Preparation

Step 1

Heat a large frying pan and fry the lamb over medium-high heat, 5-6 minutes or until browned. Transfer to a slow cooker.

Add the onion, garlic, ginger and chilies to the pan and fry 4-5 minutes. Stir in the ground coriander, cumin, chilli powder and turmeric and cook for 1 minute more. Sprinkle in the thickening granules or flour and add the tomatoes, stock and garam masala. Season with salt and pepper then bring back to a boil. Tip mixture into the slow cooker, mix, and cover. Cook for 10 hours on low until the lamb is tender.

Serve with basmati rice and nonfat natural yogurt.
