Ingredients
- 1 1/2 cups dry pearl couscous (8 oz)
- 2 tsp olive oil
- 1 1/2 cups water
- 4 tbs chopped fresh oregano
- 2 tbs chopped fresh mint
- Minced zest of 1/2 lemon
- salt and pepper to taste

Preparation
Step 1
Saute couscous in oil overe medium-high heat until light brown, 2-3 minutes.
Add water and cook according to package directions.
Toss couscous with oregano, mint and zest; season with salt and pepper.
