Ingredients
- 1 tbsp. butter
- 2 cloves garlic, chopped
- 1 onion, chopped
- 2 stalks celery, thinly sliced
- 1 yellow pepper, diced
- 1 cup green beans, cut in pieces
- 1 X 19 oz. can diced tomatoes
- 1/2 cup orange juice
- 1/2 cup vegetable stock
- 1 cup couscous
- 1 X 19 oz. can chickpeas, rinsed and drained
- 2 tsp. each: fresh chopped oregano, mint (or use 2 tsp. dried)
- 1 1/2 cups diced or crumbled feta
- salt and pepper
- hot pepper sauce (to taste)

Preparation
Step 1
In large pan, melt butter over medium high heat. Brown the garlic, onion, celery, pepper and beans. Cook 2-3 mins. Add tomatoes, juice and stock. Bring to boil. Season and add hot sauce. Add couscous, stir and cover. Turn off heat and let stand 5 mins. Fluff with fork. Add chickpeas, herbs and feta. Mix well and serve immediately. May be served cold.
