Ingredients

  • 4 bell peppers yellow or orange or red only
  • 2 tablespoons chili powder
  • 2 tablespoons cumin
  • season with salt and pepper to taste
  • 1 lb sausage
  • 1 yellow onion diced
  • 1 diced yellow or red or orange or green bell pepper
  • frozen corn
  • 1 can black beans
  • 1 can diced tomatoes with green peppers
  • 1 to 1 1/2 cup white long grain rice fully cooked
  • 1 large bunch of cilantro chopped
  • Mexican blend cheese or cheddar shredded

Preparation

Step 1

Preheat oven to 375*

Hollow out the 4 bell peppers and remove the white parts also. Set in a baking dish.

Cook rice according to package directions that will yield 1 to 1 1/2 cups cooked rice.

Saute the sausage in a pan with a little olive oil. Remove from pan and set aside.

Saute the onions and diced peppers until softened in a little olive oil. Add sausage back to the pan and then add the chili powder and cumin and salt and pepper. Add corn, black beans and diced tomatoes and rice to the pan. Turn off the heat. Add cilantro and mix together.

Cover with foil and bake for 30 minutes or until peppers are softened. Top with cheese and bake until melted. About 5 minutes or so. Enjoy!
