Black Bean and Chicken Enchiladas

To make ahead, prepare enchiladas as directed above
- 5 (3/4-ounce) slices Land O Lakes® Deli American Cheese
- 1 cup chopped cooked chicken
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 2 (15-ounce) cans black beans, drained
- 1 cup sour cream
- 1 (10-ounce) can enchilada sauce or 1 cup picante sauce or salsa
- 8 (8-inch) flour tortillas
- 2 tablespoons sliced green onions
- Chopped tomato, if desired
- Shredded lettuce, if desired
Apple Cinnamon Bundt Cake

Preheat oven to 350 degrees
- 1 cup brown sugar
- 3 large eggs
- 1 stick unsalted butter, softened
- 1/4 cup apple juice
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon cinnamon
- 5 medium apples, peeled and chopped (I use Granny Smith)
- “Southern Fried Bride’s Grand Apple Glaze”
- 1 cup confectioner’s sugar
- 2 tablespoons apple juice
Fish Tacos with Mango-Avocado Salsa

1.Preheat the oven to 225°
- 1 pound halibut or other meaty white fish fillets
- Juice of 2 limes
- One 11-ounce can whole tomatillos, drained
- 4 small zucchini—peeled, seeded and cut into small cubes
- 1/4 cup chopped cilantro leaves and stems
- 2-1/2 teaspoons coarse salt, plus more to taste
- Eight 6-inch corn tortillas
- 2 tablespoons chili powder
- 1/4 teaspoon cayenne pepper, or to taste
- 1 tablespoon extra-virgin olive oil
- 1 Hass avocado, peeled and thinly sliced
- Make the salsa ahead of time and store in the fridge—it's even better the next day.
Cheesy Chicken Enchilada Soup

In 3-quart saucepan, mix all ingredients except tortilla chips
- 2 cans (10 3/4 oz each) cream of chicken soup
- 1 can (10 oz) Old El Paso® enchilada sauce
- 2 cups milk
- 1 cup shredded reduced-fat Cheddar cheese (4 oz)
- 1 package (9 oz) frozen cooked southwestern-flavored chicken strips, thawed, chopped (2 cups)
- 3/4 cup crushed tortilla chips

- 2 1/4 c graham wafer crumbs
- 1/2 c melted marg
- 1 lrg pkg vanilla pudding
- 1 c whipping cream (I used nutriwhip)
