Beat cream cheese in mixing bowl until light and fluffy
- 1 graham cracker pie crust
- 1 8 oz. pkg. softened cream cheese
- 1 tsp vanilla
- 1 can sweetened condensed milk
- 1/2 c lemon juice
- 1 1 lb. 5 oz. can your favorite pie filling (cherry, strawberry or blueberry)
Cheesy Chicken Enchiladas and Refried Beans

In a medium saucepan over medium heat, melt the butter
- Refried Beans:
- 6 Tbsp. butter
- 1 cup diced yellow onion
- 6 Tbsp. all-purpose flour
- 3 cups chicken broth (I get this from my weekly roasted chicken)
- 1/4 tsp. salt
- ground pepper
- 1 cup tomato-based salsa
- 2 cup sour cream
- 8 large corn tortillas (we use flour, since we can’t find corn here)
- 3 cups diced cooked chicken (from the weekly roast chicken)
- 6 green onions, chopped
- 3 cups grated Monterey Jack cheese (we can’t get this here, either, so we improvise with common sheep cheese – sounds gross, but it’s not)
- sliced black olives, for garnish
- 4 cups dry pinto beans
- 2 tsp. salt
- 2 tsp. cumin
- 3 cloves garlic, minced
- 8 jalapeno slices
- 1/2 tsp. black pepper
- water

"Graham crackers and pecans encrust the spirited, spiced filling
- Crust:
- 3/4 cup graham cracker crumbs (about 5 cookie sheets)
- 1 tablespoon finely chopped pecans
- 1 teaspoon granulated sugar
- 1 tablespoon butter, melted
- Cooking spray
- Filling:
- 1 cup (8 ounces) 1/3-less-fat cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 (15-ounce) can unsweetened pumpkin
- 2 large eggs
- 2 tablespoons bourbon
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground allspice
- Remaining ingredients:
- 1/3 cup cold heavy cream
- 2 teaspoons powdered sugar
Hot Spinach-Artichoke Dip

Preheat the oven to 350. Grease a casserole dish with a non-stick spray
- 1 10-ounce package frozen chopped spinach, cooked in the microwave on high for 5 minutes
- 2 13 3/4-ounce cans artichoke hearts, drained and chopped in a food processor
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup freshly grated parmesan cheese
- 1 cup grated pepper jack cheese
Green Rice with Chicken, Peas & Almonds

1.Pulse the onions and parsley in a food processor until finely chopped
- 2 medium onions, coarsely chopped
- 1/2 cup flat-leaf parsley
- 1/4 cup extra-virgin olive oil
- 2 cups long-grain rice
- 3-1/2 cups chicken broth
- 1 pound chicken tenders, halved crosswise
- Salt and freshly ground pepper
- 1 cup frozen peas, thawed
- 1/2 cup slivered almonds, lightly toasted
- Juice of 1 lime
- Hot stuff
