Pear and Dried Cherry Cobblers with Ginger-Chocolate Chip Biscuit Topping

- 2 1/4 pounds firm but ripe Anjou, Bosc, or Comice pears, peeled, cored, cut into 3/4-inch dice
- 1/2 cup dried tart cherries
- 1/3 cup sugar
- 1 tablespoon finely chopped crystallized ginger
- 1 tablespoon all purpose flour
- 2 tablespoons (1/4 stick) unsalted butter, cut into 1/2-inch cubes
- Topping
- 1/3 cup sugar
- 1 1/2 tablespoons chopped crystallized ginger
- 1 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 5 tablespoons chilled unsalted butter, cut into 1/2-inch cubes
- 1/3 cup mini semisweet chocolate chips
- 1/2 cup chilled buttermilk
- Vanilla ice cream

- Dressing:
- 1 package fresh baby spinach
- 1/2 pt fresh strawberries, sliced
- 1/2 c sugar
- 1/4 t paprika
- 1 1/2 t minced onion
- 1/4 t worchestershire sauce
- 2 T sesame seeds
- 1/2 c canola oil
- 1/4 c apple cider vinegar
Black Bean Cakes

- serve with:
- 3 15-ounce cans black beans - divided
- 2 large eggs
- 3 cups panko (japanese bread crumbs) - divided
- 1 c. chopped red bell pepper
- 1/2 c. chopped green onions (about 4)
- 1/2 c. fresh cilantro
- 2 garlic cloves
- 2 t chili powder
- 1 t cumin
- 1 t salt
- 1/2 t onion powder
- 1/2 t ground pepper
- 4 T oil (for cooking)
- salsa
- sour cream
- avocado slices
Sweet and Sour Chicken

This is NOT a chinese recipe but a Portuguese version made with brown sugar and vinegar
- Add:
- 3 1/2 lbs chicken (I use breast and thighs with skin)
- squeeze fresh lime on chicken, sprinkle with garlic salt and pepper.
- Brown chicken in 1/4 c butter, remove from pan.
- 1 clove minced garlic
- 1 t salt
- 1 t oregano
- 1 c brown sugar (dark)
- 1/4 c apple cider vinegar

- Icing:
- 1 c crisco
- 1 c sugar
- 1 c pumpkin
- 1 egg
- 1/2 t salt
- 1 t cinnamon
- 1 t vanilla
- 1 t baking powder
- 1 t baking soda
- 2 c flour
- 1/2 cup sugar
- 3 T butter
- 4 T milk
- Bring together to boil for 2 minutes, then remove from heat and whisk in:
- 1 c powdered sugar
- 1 t vanilla

- Sugar crust:
- 1 1/2 sticks of butter, room temp.
- 2 c sugar
- 1/3 c buttermilk
- 2 t vanilla
- pinch of salt
- 5 eggs
- 5 oz. angel flake coconut
- 10 or 11 inch partially baked sugar cookie crust tart shell
- 1 c plus 3 T all-purpoise flour
- 1 1/4 sticks of unslated butter
- 5 1/2 T sugar
- pinch of salt
- 1/8 t grated lemon zest
- 1/4 t vanilla
- 1/2 egg (beat 1 egg first and then divide)

- 2 13-to 14-ounce cans unsweetened coconut milk* (preferably organic)
- Cupcakes:
- 2 cups all purpose flour
- 2 1/4 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
- 1 1/3 cups sugar
- 3 large eggs
- Seeds scraped from 1 split vanilla bean or 1 1/2 teaspoons vanilla extract
- 1 cup reduced coconut milk (see above), room temperature
- Frosting:
- 1 cup (2 sticks) unsalted butter, room temperature
- 2 1/2 cups powdered sugar
- 1/3 cup reduced coconut milk (see above), room temperature
- Seeds scraped from 1 split vanilla bean or 1 1/2 teaspoons vanilla extract

- 1 3/4 cups (packed) brown sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 5 1.4-ounce chocolate-covered English toffee bars (such as Heath), coarsely chopped - can use Heath toffee bits
- 1 cup walnuts, toasted, chopped
