Instant Pot Pressure Cooker Whole Roast Chicken

Turn on the sauté setting and add in the coconut oil
- One small chicken – about 4 pounds
- 1 tablespoon coconut oil
- Salt
- Pepper
- Additional seasonings if desired (the chicken pictured was seasoned with lemon pepper)
Smothered Pork Chops

Add flour, garlic and onion powder, salt, cayenne and black pepper into a shallow dish and stir to combine
- 1/2 cup flour
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/2 teaspoon salt
- pinch of cayenne (more if you like it spicy)
- 1/4 teaspoon freshly ground black pepper

Favorite Potato Salad

Place your potatoes in a pot and bring to a rolling boil
- 10-12 potatoes (we use a 5 lb. bag)
- 6-7 boiled eggs
- 1 can black olives (we use about 20 and slice)
- 2 cups mayonnaise
- 3-4 TB pickle juice
- baby dill pickles (diced)
- 2 tsp. mustard
- salt and pepper to taste
