Directions Preheat the oven to 400 degrees F
- 2 pounds large shrimp (14 to16 shrimp per pound)
- 1 tablespoon good olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup good mayonnaise
- 1 cup chopped scallions, white and green parts (6 to 7 scallions)
- 1 cup chopped basil leaves (18 to 20 leaves)
- 1/4 cup freshly squeezed lemon juice
- 2 cloves garlic
- 2 teaspoons anchovy paste
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 cup sour cream
- 2 stalks celery, cut into sticks
Summer Panzanella Salad (Fresh Flavors June '14)

Serves 8 Preparation Heat a skillet over medium high heat
- 1 1 1 tbsp TFM Extra Virgin Olive Oil
- 1 1 1 pint cherry tomatoes, halved
- 1 1 1 artisan baguette torn into bite sized pieces
- 1 1 1 English cucumber diced
- 1 1 1 small red onion cut in half, then finely sliced
- 1/2 1/2 1/2 bunch fresh basil roughly chopped
- 1/2 1/2 1/2 bunch fresh mint roughly chopped
- 3/4 3/4 3/4 c Terrapin Ridge Farm Garlic and Herb Vinaigrette
- 4 4 to grinds TFM Sea Salt and Black Peppercorn Grinder, to taste
The Best Green Beans Ever

Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer
- 1 pound green beans
- 2 tablespoons bacon grease (can substitute 2 tablespoons butter)
- 2 cloves garlic, minced
- 1 large onion, chopped
- 1 cup chicken broth, plus more if needed
- 1/2 cup chopped red bell pepper
- 1/2 to 1 teaspoon kosher salt (can substitute regular tablesalt, use 1/4 to 1/2 teaspoon)
- Ground black pepper
Tagliarelle with Truffle Butter

Add 1 tablespoon salt to a large pot of water and bring to a boil
- Kosher salt
- 1/2 cup heavy cream
- 3 ounces white truffle butter
- Freshly ground black pepper
- 1 (8.82-ounce) package Cipriani tagliarelle dried pasta or other egg fettuccine
- 3 tablespoons chopped fresh chives
- 3 ounces Parmesan, shaved thin with a vegetable peeler

- 1 package (2 sheets) frozen puff pastry, such as Pepperidge Farm, defrosted
- 2 tablespoons Dijon mustard
- 12 thin (not paper thin) slices soppressata salami (3 1/2 inches in diameter)
- 6 ounces Gruyere cheese, grated
- 1 egg beaten with 1 tablespoon water, for egg wash
