- Ladyfingers:
- 6 eggs
- 1/2 c plus 2 T sugar
- 1 c flour
- 2 T confectionary sugar
- 2 T sugar
- Filling:
- 3 eggs
- 1/2 c sugar
- 1 c plus 1 T brewed espresso
- 2 T brandy
- 1 c marscapone
Potato Pancakes

Shred vegetables. Mix batter ingredients and add to vegetables making sure to blend well
- 4 medium potatoes
- 1/2 small onion
- 2 eggs
- 2 T flour
- 2 T heavy cream
- 2 T melted butter
- 1/2 tsp salt
- pepper to taste
Scalloped Potatoes

Preheat oven to 375 degrees Blend the soup with half n half and freshly ground pepper
- 1 can Campbell's cream of mushroom soup
- 1/2-3/4 c heavy cream
- pepper
- 4 c thinly sliced potatoes
- 1 small diced onion
- butter
- paprika
Marinara Sauce

In large kettle, saute onion till soft
- 2 large cans whole tomatoes
- 2 large cans puree
- 1 small chopped onion
- 3 cloves minced garlic
- 3 T olive oil
- 1/2 c white cooking wine
- 3 T parmesan
- 1/2 can water
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp diced basil
Pasta w/Lobster and Tarragon Sauce

- 2 T olive oil
- 1/2 c finely chopped yellow onion
- 2 lb 3 oz can Italian plum tomatoes
- 2 tsp dried tarragon
- salt/pepper
- 1 c heavy cream
- pinch of cayenne
- 1/2 lb cooked lobster meat (or more)
Crabmeat Dip

Whip the cream cheese until fluffy
- 1 can of lump crabmeat
- 8 oz softened cream cheese
- 1/2 tsp (or more) horseradish
- 1 tsp minced onion
- dash of garlic powder
- small pkg toasted slivered almonds (optional)
- .....place the almonds in oven until golden brown
Aunt Amy's Spaghetti Sauce

Put the whole tomatoes in the food processor to crush
- Sauce:
- 2 large cans (29 oz) Tutorossa tomato puree
- 3 large cans (29 oz) Tutorossa whole tomatoes
- 1 T salt
- 2 1/2 T sugar
- freshly ground pepper
- 1 tsp dried basil or freshly chopped basil
- Meatballs:
- 1 lb ground pork
- 1 lb ground beef
- 3/4 c seasoned Italian bread crumbs
- 3/4 c romano cheese
- 1/2 c chopped parsley
- salt/pepper
- 2 cloves minced garlic
- 7 jumbo eggs
- Spareribs
- Sausage
- Peeled hard boiled eggs
WS Pappardelle with Bolognese Sauce

In a large saute pan over medium high heat, warm 1 T of the olive oil
- 2 T olive oil
- 1 1/4 lb ground beef
- 1 1/4 lb ground pork
- kosher salt and fresh ground pepper to taste
- 4 oz pancetta, cut into 1/2 inch dice
- 1 yellow onion, finely diced
- 2 carrots, peeled and finely diced
- 1 celery stalk, finely diced
- 5 garlic cloves, minced
- 1/3 c tomato paste
- 1 cup dry red wine
- 1 cup milk
- 2 cans (28 oz) whole tomatoes, passed through food mill
- 2 bay leaves
- 1 Parmigiano Reggiano cheese rind
- 1 lb pappardelle, cooked al dente
- grated Parmigiano

- 1/4 cup light brown sugar
- 1 stick softened unsalted butter
- Filling.....
- 2 sticks softened unsalted butter
- 2 cups confectionery sugar
- 2 eggs
- 1 tsp vanilla
- 20 1/2 oz crushed pineapple
- sliced banans
- 8 oz Cool Whip
- maraschino cherries
- crushed nuts
- Hershey's chocolate syrup
