Hush Puppies with Green Zebra Tomato Jam

In a large bowl, whisk the cornmeal with the flour, sugar, salt and baking powder
- Hush Puppies:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 3 tablespoons sugar
- 1 tablespoon kosher salt
- 1 tablespoon baking powder
- 1 large egg, lightly beaten
- 1 cup milk
- 3 tablespoons unsalted butter, melted, or 1 tablespoon melted butter plus 2 tablespoons melted bacon fat
- Jam:
- 2 pounds Green Zebra tomatoes, cut into 1/2-inch dice
- 1/2 cup honey
- 1/2 cup apple cider vinegar
- 1/4 cup sugar
- 1 tablespoon finely grated fresh ginger
- 1 garlic clove, very finely chopped
- One 1-inch cinnamon stick
- 1 1/2 teaspoons ground cumin
- 1/4 teaspoon cayenne pepper
- Salt
- Vegetable oil, for frying
