  • Hush Puppies:
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon kosher salt
  • 1 tablespoon baking powder
  • 1 large egg, lightly beaten
  • 1 cup milk
  • 3 tablespoons unsalted butter, melted, or 1 tablespoon melted butter plus 2 tablespoons melted bacon fat
  • Jam:
  • 2 pounds Green Zebra tomatoes, cut into 1/2-inch dice
  • 1/2 cup honey
  • 1/2 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 tablespoon finely grated fresh ginger
  • 1 garlic clove, very finely chopped
  • One 1-inch cinnamon stick
  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper
  • Salt
  • Vegetable oil, for frying
