- 3 Tablespoons sesame oil
- 1 2-to-3-inch piece of ginger, peeled and sliced into coins, approximately 12
- 12 cloves of garlic, peeled
- 4 whole scallions, trimmed and cut into 1-inch pieces
- 3 dried red peppers or 1 teaspoon red-pepper flakes
- 2 pounds chicken thighs, boneless or bone-in, cut into bite-size pieces
- 1 Tablespoon unrefined or light brown sugar
- 1/2 cup rice wine
- 1/4 cup light soy sauce
- 2 cups fresh Thai basil leaves or regular basil leaves

Add milk/water and noodles into an oversized mug (I used a 20 ounce mug)
- 1/2 cup elbow macaroni noodles
- 1/2 cup milk or water (milk will make the macaroni and cheese creamier)
- 1/2 cup finely shredded cheddar cheese
Best Parmesan Chicken Cutlets

Be sure to flour the cutlets before dipping in egg, so the egg mixture will stick well
- 3/4 cup all-purpose flour
- 2 large eggs
- 1-1/2 cups panko (Japanese breadcrumbs)
- 1/4 cup grated Parmesan
- 1 Tablespoon mustard powder
- Kosher salt, freshly ground pepper
- 4 small skinless, boneless chicken cutlets (about 1 1/2 pounds total), pounded to 1/4" thickness
- 8 tablespoons olive oil, divided
- 1 lemon, halved
- (adding 1-2 Tblsp of cornstarch to the flour, incorporating it well, will make these even more crispy)

- • 1 pound small beets, well-scrubbed (about 5)
- • 1/4 cup sliced almonds, toasted
- Vinaigrette
- • 1/4 cup red wine vinegar
- • 1/2 teaspoon Dijon mustard
- • 1/2 teaspoon salt
- • 1/4 teaspoon sugar
- • 1/2 cup olive oil
- Salad
- • 1 large pear
- • 3 cups mesculin greens
- • 2 ounces goat cheese
Spanish Brown Rice

- 1-1/2 tablespoon canola oil
- 1 onion, chopped
- 3 garlic cloves, sliced
- 2 jalapeño peppers, seeded and chopped
- 1-1/2 cup long-grain brown rice
- 2-3/4 cups water
- 3/4 cup crushed canned tomatoes
