Tomato Stack Salad with Corn and Avocado

- 2 bacon slices, halved
- 1/4 cup low-fat buttermilk
- 1 tablespoon finely chopped fresh chives
- 1 tablespoon finely chopped fresh basil
- 2 tablespoons canola mayonnaise
- 2 teaspoons cider vinegar
- 1 garlic clove, minced
- 1/2 teaspoon freshly ground black pepper, divided
- 2 ears shucked corn
- Cooking spray
- 2 large beefsteak tomatoes, cut into 8 (1/2-inch-thick) slices total
- 2 globe tomatoes, cut into 8 (1/2-inch-thick) slices total
- 1/8 teaspoon kosher salt
- 1/2 ripe peeled avocado, thinly sliced
- 4 teaspoons extra-virgin olive oil
Blintz Casserole

Preheat oven to 350° Place cheese blintzes in a 9 X 13 inch baking dish
- 13 cheese blintzes
- 6 eggs
- 4 tablespoons sugar
- 1 cube butter, melted
- 4 tablespoons orange juice
- 1/4 teaspoon salt
- 2 teaspoons vanilla
- 1 16-ounce container sour cream
- extra sour cream for serving
- 1 jar lingonberry preserves
The Ultimate Lasagna

- 2 pound dried lasagna noodles
- Extra-virgin olive oil
- 2 pounds ground beef
- 2 pound ground Italian sausage
- 1 onion, chopped
- 2 cloves garlic, sliced
- 3 carrots, chopped
- 2 stalks celery, chopped
- 2 tablespoons chopped fresh basil
- 1/4 cup finely chopped Italian flat-leaf parsley
- 1 tablespoon chopped oregano leaves
- 2 tablespoons all-purpose flour
- 2 cups red wine
- 2 (28-ounce) cans tomatoes (recommended: San Marzano)
- 3 tablespoons heavy cream
- 1 teaspoon ground cinnamon
- 2 quarts ricotta cheese, (2 containers)
- 2 eggs, lightly beaten
- 1/2 cup grated Parmesan
- Kosher salt and freshly ground black pepper
- 1 pound mozzarella cheese, shredded
- Grated Parmesan and mozzarella, for topping
Golden Potato Latkes

Shred potatoes and onions with medium shredding blade of food processor
- 2 pounds Yukon gold potatoes, peeled, cut into 1-inch pieces
- 1 8-ounce onion, cut into 1-inch pieces
- 2 large eggs
- 2 tablespoons unsalted matzo meal
- 1 teaspoon slat
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon baking powder
- 8 tablespoons (or more) vegetable oil
Chunky Applesauce with Cranberries

- 3 pounds Golden Delicious apples, peeled, quartered, cored, cut into
- 3/4 -inch pieces
- 1 1/2 cups apple juice
- 1 1/2 cups fresh or frozen cranberries
- 1/2 cup sugar
Slow-Grilled Rack of Lamb with Mustard and Herbs

Light a grill or preheat a grill pan
- 2 racks of lamb (2 1/2 pounds each), chine bones removed and excess fat trimmed
- Salt and freshly ground black pepper
- 2 tablespoons Dijon mustard
- 1 tablespoon chopped flat-leaf parsley
- 2 teaspoons chopped rosemary
- 2 teaspoons chopped thyme
- Caramelized Onion Jam, for serving
Chicken Schnitzel

Lay a chicken breast between 2 sheets of wax paper
- One pound skinless boneless chicken breasts
- 2 cups all purpose flour
- 2 eggs, lightly beaten
- 2 cups very fine, fresh breadcrumbs
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons butter
- 1 tablespoon vegetable
Shaved Zucchini Salad with Parmigiano and Pistachios

A variation would be to use Pine nuts instead of the pistachios
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon finely grated lemon zest
- 1 1/2 tablespoons fresh lemon juice
- Salt and freshly ground pepper
- 2 pounds small, firm zucchini, very thinly sliced lengthwise on a mandoline
- 1/3 cup shaved Parmigiano-Reggiano cheese (about 1 1/2 ounces)
- 3 tablespoons lightly salted roasted pistachios
