  • 1 tbs Basting Oil
  • 1 tsp Butter
  • 4 tsp Shredded Parmigiano-Reggiano Cheese

1. On a plate, combine the flour, lemon zest, cumin, and 1/2 tsp each salt and pepper

  • 2 tbs all-purpose flour (pan-searing flour, if you can find it)
  • 2 tsp grated lemon zest, plus 1 tbs fresh lemon juice
  • 1 tsp ground cumin
  • Kosher salt and pepper
  • 1 1/2 lbs chicken cutlets (6-8)
  • 2 tbs olive oil
  • 2 shallots, thinly sliced
  • 1 cup pitted green olives, halved
  • 1/2 cup fresh flat-leaf parsley, chopped (optional)
  • 1/2 cup dry white wine
