Blueberry and Thyme Collins

- 1 1/3 cups apple-thyme simple syrup, recipe follows
- 1 cup gin (recommended: Bombay Sapphire)
- 1/4 cup fresh lemon juice (about 1 large lemon)
- Ice
- 1/4 cup blueberry jam
- Club soda, chilled
- Fresh thyme sprigs, for garnish
- Special equipment: a 2 1/2 cup-capacity martini shaker
- 20 (4-inch) long sprigs fresh thyme
- 1 cup sugar
- 1 1/2 cups 100 percent apple juice (recommended: Martinelli's)
Salt Cod with Polenta

FAnelli family classic. For the Holidays
- 3 pounds baccala, soaked for 3 days changing water at least once daily.
- 4 tablespoons virgin olive oil
- 4 tablespoons butter
- 2 Spanish onions, chopped in 1/2 inch dice
- 4 salted anchovies soaked in milk for 4 hours (optional)
- 1/2 teaspoon cinnamon
- 1/2 cup dry white wine
- 3 cups milk, plus more if necessary.
- 2 bunches of Italian parsley, finely chopped to yield 1/2 cup.
- 1 recipe soft polenta, recipe follows.
- 2 tablespoons salt
- 1 cup polenta or cornmeal
- 4 cups water
- 1/2 fontina cheese, grated.
Italian Baked Chicken and Pastina

- 1 cup pastina pasta (or any small pasta)
- 2 tablespoons olive oil
- 1/2 cup cubed chicken breast (1-inch cubes)
- 1/2 cup diced onion (about 1/2 a small onion)
- 1 clove garlic, minced
- 1 (14.5-ounce) can diced tomatoes with juice
- 1 cup shredded mozzarella
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup bread crumbs
- 1/4 cup grated Parmesan
- 1 tablespoon butter, plus more for buttering the baking dish
