Salad Nicoise

This Salad can be served with freshly grilled tuna, salmon or halibut
- Salad
- 1 1/2 cups slender green beans (haricots verts), stem ends
- trimmed
- 6 small Yukon gold potatoes
- 9 cups mixed baby greens
- Jacques Pepin Vinaigrette dressing
- 3/4 to 1/4 by 2 inch julienne green bell pepper
- 3/4 cup 1/4 by 2 inch julienne red bell pepper
- 3/4 cup 1/4 by 2 inch julienne yellow bell pepper
- 3 medium tomatoes, each cut into 6 wedges
- 1/3 cup pitted Kalamata Olives, cut in half lengthwise
- 3 hard boiled eggs, cut into 6 wedges
- 12 about 12 shallot rings, about 1/8 inch thick
- Tuna
- Canola oil
- 6 tuna fillets, preferably center cut, 6 ounces each
- Kosher salt and freshly ground black pepper
- Fleur de sel
- Vinaigrette
- 1/4 cup red wine vinegar
- Kosher Salt
- 1/2 cup olive oil plus 1 Tablespoon
- Freshly ground pepper.
- Pour the vinegar into a small bowl and add a generous pinch of salt. Let sit for about 5 minutes, to allow the salt to begin to dissolve. Slowly whisk in the olive oil. Season with salt and pepper to taste.
Pumpkin Log

Thanksgiving and Christmas treat
- Mix together:
- Grease, flour and line with parchment paper a jelly roll pan
- 3 eggs
- 2/3 cup Pumpkin
- 1 c. Sugar
- 1 Teaspoon baking soda
- 1/2 teaspoon cinnamon
- 3/4 cup flour.
- Pour into pan, bake at 375 degrees for 20 minutes
- Turn onto a sugared towel and roll up
- cool completly
- Filling:
- 2 Tablespoons butter room temp.
- 8 ounces softened cream cheese
- 3/4 Teaspoon vanilla
- 1 Cup Powdered sugar
Healthy -Fat Balsamic Dressing

Great tasting, guilt free, salad dressing
- Container to mix dressing in.
- 1/3 of the container fill with Balsamic vinegar
- 1/3 of the container fill with apple cider vinegar
- Fill the remaining 1/2 of container with equal parts
- Extra virgin Olive oil and Udo's Choice EFA oil blend.
- Add to taste, onion powder, garlic powder and pepper.
- Shake well to mix.
Filled Stella Doro cookies

Whip the wet ingredients on low speed, until blended, and smooth
- 1 Can crushed Pineapple, in juice, drained
- 8 oz. cream cheese...lite room temp.
- 8 8 oz. cool whip.....lite
- 1 package Stella Doro Angennie Cookies .
Cranberry walnut bread pudding

Mix all together, pour in greased baking dish and bake until the custard is set and the bread pudding is nicely bro...
- gredients:
- One loaf of Publix cranberry walnut loaf.
- 2 cup's of cream
- 2 cups of milk
- 4 eggs scrambled
- 2 teaspoons of vanilla
- 1 cup of splenda brown sugar or one cup of light brown sugar
- 1/2 cup of chopped walnuts
- 1/2 cup of cranberries
- Vanella custard sauce:
- 1/2 c. splenda brown sugar or light brown sugar
- 1 tbsp. all-purpose flour
- dash of nutmeg
- 1 large egg
- 2 tbsp. butter
- 1 1/4 c. whipping cream
- 1 tbsp. vanilla extract
- if you would like to make this a rum sauce just add 1/8 cup of rum.
- Mix all ingredients in a saucepan and cook on medium heat until thickened.
Dago Bread

- 2 loaves of frozen bread, thawed and doubled in size.
- 1 jar Mexican cheese Whiz
- 1 lb. ground beef
- 1 med. onion, chopped
- 1 sm. green pepper, chopped
- 1 Pkg. pepperoni
- 1 pkg. mozzarella cheese, shredded.

- 4 cups basic chicken stock
- 6 Tbsp. Carolina or other long grain white rice

Potato-Fennel Gratin

- 2 small fennel bulbs
- 1 yellow onion, thinly sliced
- 2 tablespoons good olive oil
- 1 tablespoon unsalted butter
- 2 pounds russet potatoes (4 large potatoes)
- 2 cups plus 2 tablespoons heavy cream
- 2 1/2 cups grated Gruyère cheese (1/2 pound)
- 1 teaspoon kosher salt

Cheese Stuffed Pork Chops

- Kosher salt
- 1/4 cup sugar
- 4 bone in thick cut pork chops (6 to 8 oz. each)
- 1/2 medium head escarole
- 2 cloves garlic
- 4 Tbsp. extra virgin olive oil, plus more for brushing
- Freshly ground pepper
- 4 slices provolone cheese (about 2 oz.)
- 1 (19 ounce) can cannellini beans, drained and rinsed
- 4 fresh sage leaves, chopped
sesame Potato Chips

Snacks for after school
- Preheat 2 baking sheets in a 425 degree oven.
- Toss thinly sliced russet potatSpread on the hot baking sheets, sprinkle with sesame seeds and bake 10 minutes.
- For Curry Potato Chips.
- Make sesame Potato Chips : toss the potatoes with curry powder before baking.
- Omit the sesame seeds.
