- 1 cup drained anad thinly sliced oil-packed sun-dried tomatoes
- 1 tsp. minced garlic
- 1 fresh jalapeno pepper, cored, seeded, and finely chopped
- 1 cup chopped fresh basil
- 12 oz. rotini pasta, cooked al dente and drained
- 2-3 tbsp. olive oil

- 1/4 cup (1/2 stick) butter, melted
- 1 1/2 tsp. minced garlic, divided
- 4-5 cups 1" cubes Italian bread
- coarse salt
- 3 cups coarsely chopped ripe tomatoes
- 1/2 fresh serrano pepper, seeded and minced
- 12 oz. angel hair pasta
- 1/4 cup olive oil
- 2 cups chopped fresh basil

- 2/3 cups milk

- 1/4 cup olive oil, divided
- 4 medium zucchini, diced
- 4 Italian plum tomatoes, chopped
- 1/4 cup fresh lemon juice
- 1/2 tsp. dried tarragon
- 2 tsp. fresh oregano
- 1 tsp. salt
- 1/2 tsp. frshly ground pepper
- dash hot red pepper sauce
- Chicken:
- 8 boneless, skinless chicken breast halves (about 2 lbs.)

1. Heat oven to 375°F. On lightly floured surface, unroll puff pastry
- 1 sheet frozen puff pastry (from 17.3-oz package), thawed
- 1 tablespoon olive or vegetable oil
- 3/4 lb boneless skinless chicken breasts, cut into 1/2-inch pieces
- 1 large onion, coarsely chopped (1 cup)1 cup quartered ready-to-eat baby-cut carrots (5 to 6 oz)
- 3/4 cup Green Giant® frozen sweet peas(from 1-lb bag)
- 1/2 cup sour cream
- 1 jar (12 oz) chicken gravy
- 2 tablespoons cornstarch
- 1/4 teaspoon dried thyme leaves
- 1/4 teaspoon pepper
- 1 egg, beaten, if desired

This light and fresh summer pasta salad is our favorite picnic food
- For the dressing:
- 1 pound gluten-free brown rice penne pasta
- 1 medium zucchini, sliced
- 1 pound fresh asparagus spears, ends trimmed
- 1 cup grape tomatoes
- 4 scallions or spring onions
- 2 tablespoons chopped fresh basil leaves
- 1 tablespoon chopped fresh mint
- 1 tablespoon chopped fresh cilantro leaves
- Sea salt and ground pepper, to taste
- 1 medium yellow tomato
- 5 tablespoons Veganaise (vegan mayo)
- 5 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice or rice vinegar
- 1/2 teaspoon minced fresh garlic
- 1 teaspoon dried dill
