Roast Beef & Horseradish Canapés

Cook waffle fries as directed on package
- 12 frozen waffle fries (preferably Alexia All Natural Seasoned Waffle Fries)
- 3 oz thinly sliced roast beef torn in pieces
- 2 T. horseradish sauce ***
- 1/4 tsp kosher salt & freshly ground pepper
- Simple Homemade Horseradish Sauce ~ 1/2 c. sour cream, 1/4 plain nonfat greek yogurt, 2-4 T. fresh horseradish (available at many butcher shops & fine meat markets in grocery stores)
Restaurant-Style Buffalo Chicken Wings

In a large zip lock bag add the flour, paprika, cayenne pepper and salt
- 1/2 cup all-purpose flour
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 10 chicken wings
- canola oil for deep frying (not needed for baking method)
- 1/4 cup butter
- 1/4 cup hot sauce (like Frank's Hot Sauce)
- 1 dash ground black pepper
- 1 dash garlic powder
- BLUE CHEESE DIPPING SAUCE (combine all & chill at least 6 hrs - best if overnight)
- 1/2 cup sour cream
- 1/2 cup real mayonnaise
- 2/3 cup crumbled blue cheese (not Gorgonzola)
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Red Curry-Glazed Salmon

Heat broiler. Place salmon on foil lined - broiler proof baking sheet
- 4 - 5 oz pieces salmon fillet
- 1 T. Thai red curry paste
- 1 T. canola oil
- 1 tsp light brown sugar
- 1/2 tsp kosher salt & fresh ground pepper
Crispy Salami Chips w/Thyme Mustard

Heat oven to 375. Arrange salami in single layer on a rimmed baking sheet
- 12 thin slices deli hard salami
- 1/4 c. Dijon mustard
- 1 T. chopped fresh thyme
Apricot-Glazed Pork Chops

Heat olive oil in large pan over medium- high heat
- 4 pork chops (bone-in 1" thick)
- 1/2 c. apricot preserves
- 1 T. balsamic vinegar
- 1/2 tsp kosher salt & fresh ground pepper
- 2 tsp olive oil
Flaky Tomato & Mozzarella Tart

Heat oven to 425. On a lightly floured surface, roll puff pastry into a 9 by 6 inch rectangle
- 1/2 sheet puff pastry (1/4 of a 17.3 oz pkg)
- 1 cup grape or cherry tomatoes (halved if large)
- 1 cup grated mozzarella
- 1 T. olive oil
- 1/2 tsp kosher salt & fresh ground pepper
Pasta w/Goat Cheese & Basil Oil

- 12 oz of short pasta (like gremelli)
- 3 c. fresh basil leaves
- 1/2 c. olive oil
- 4 oz goat cheese
- 1/2 tsp kosher salt & fresh ground pepper
Arugula Salad w/White Beans & Pesto

In medium bowl toss/combine all ingredients
- 4 c. arugula
- 1 can cannellini beans (15.5 oz, rinsed)
- 1/3 c. pesto
- 1/4 tsp kosher salt & fresh ground pepper
Cha Cha's White Chicken Chili

Heat the oil in a large saucepan over medium-low heat
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 3 cloves garlic, crushed
- 1 (4 ounce) can diced jalapeno peppers
- 1 (4 ounce) can chopped green chile peppers
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon ground cayenne pepper
- 2 (14.5 ounce) cans chicken broth
- 3 cups chopped cooked chicken breast
- 3 (15 ounce) cans white beans
- 1 cup shredded Monterey Jack cheese

- 1 c. flour or flour substitute (if making gluten free version)
- 2 eggs, beaten
- 1 T. vanilla
- 1/2 bag mini marshmallows
- ICING
- 2 c. powdered sugar
- 1/4 c. unsweetened cocoa
- 2 T. unsalted butter
- 1 T. boiing water
