Sauteed Chicken Breasts with Latin Citrus Sauce

Made with yellow rice with black beans and lime and cilantro and roasted asparagus
- Chicken:
- 2 tsp brown sugar
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/8 tsp ground red pepper
- 4 (6oz) skinless, boneless chicken breast halves
- 1 tsp vegetable oil
- Sauce
- 1 1/2 tsp bottled minced garlic
- 1/4 cup fresh lime juice
- 1/4 cup orange juice
- 2 tbs honey
- 2 tbs chopped fresh cilantro
- 2 tbs chopped fresh mint
Bean & Butternut Tacos

Serve on wraps with salsa, sour cream, cilantro, and avacado
- 4 * 4 cups diced (1/2-inch) peeled butternut squash
- 2-3 * 2-3 slices jalepeno
- 2 * 2 cloves garlic, chopped small
- 1 * 1 tablespoon extra-virgin olive oil
- 3/4 * 3/4 teaspoon dried oregano, preferably Mexican, divided
- 1/2 * 1/2 teaspoon salt, divided
- 1/4 * 1/4 teaspoon cumin seeds, plus 1/2 teaspoon ground toasted cumin seeds (see Tip), divided
- 1 * 1 can pinto beans, rinsed
- 1/2 * 1/2 teaspoon chili powder
- * Freshly ground pepper to taste
- 8 * 8 6-inch corn or flour tortillas
- 1/2 * 1/2 cup fresh cilantro leaves

Southwest Layered Bean Dip

1. Combine 1st 7 ingredients in a bowl
- 1 16oz can Fat Free Refried Beans
- 1 15oz can Black Beans, Rinsed
- 4 Scallions Sliced
- 1/2 Cup Prepared Salsa
- 1/2 tsp Cumin
- 1/2 tsp Chili Powder
- 1/4 Cup pickled jalapenos
- 1 Cup Shredded Cheese, Jack or Cheddar
- 1/2 Cup Sour Cream
- 1.5 Cup Chopped Romaine
- 1 Medium Tomato
- 1 Medium Avacado
- 1/4 Cup Sliced Olives
Banana French Toast

- 8 Slices cinnamon or Raisin Bread
- 2 Med bananas, cut in 1/4 inch slices
- 1 Cup milk
- 4 oz Cream cheese, softened
- 3 Eggs
- 1/3 Cup Sugar
- 3 Tbs Flour
- 2 Tsp vanilla
- Powdered Sugar (optional)
Chinese Five Spice Almond Cookies
