Jalapeño Poppers

In a fry pan over medium-high heat, warm the olive oil
- 1 Tbs. olive oil
- 1 yellow onion, finely diced
- Salt, to taste
- 1 lb. fresh chorizo sausage, casings removed, or ground pork
- 18 large jalapeño peppers
- 4 oz. Monterey jack cheese, grated
Beer-Battered Fish

This beer batter can also be used for chicken tenders, onion rings, and zucchini slices
- 8 cups vegetable oil
- 1 cup all-purpose flour
- Coarse salt
- 1/2 teaspoon baking powder
- 1 cup pale lager
- 1 1/2 pounds boneless, skinless cod or other firm white-fleshed fish, cut into 1-by-3-inch pieces
- lemon wedges, for serving
- Tartar Sauce, for serving
Braciole-Spatini

Stir the first 5 ingredients in a medium bowl to blend
- 1/2 cup dried Italian-style bread crumbs
- 1 garlic clove, minced
- 2/3 cup grated Pecorino Romano
- 1/3 cup grated provolone
- 2 tablespoons chopped fresh Italian parsley leaves
- 4 tablespoons olive oil
- Salt and freshly ground black pepper
- 1 (1 1/2-pound) flank steak
- 1 cup dry white wine
- 3 1/4 cups Simple Tomato Sauce, recipe follows, or store-bought marinara sauce
Pomegranate Braised Beef Short Ribs

Directions Preheat oven to 275 degrees
- 5 tablespoons vegetable oil, divided
- 4 pounds bone-in beef short ribs, cut into 3-inch pieces (8 to 12)
- Salt and pepper
- 1 large yellow onion, cut into wedges
- 3 cloves garlic, smashed and peeled
- 10 sprigs thyme
- 1/4 cup all-purpose flour
- 3 cups pomegranate juice
- 1 cup dry red wine, such as Merlot
- 1/2 cup pomegranate seeds, for serving

Method: Soak gelatin in the cold water; set aside
- Combine:
- To form bunnies and chicks: 3 1/2 tablespoons Plain gelatin
- Traditional marsmallow for filled eggs etc: 2 tablespoons Plain gelatin
- 1/2 cup Cold Water...let stand 10 minutes
- Combine soaked gelatin with:
- 1/4 cup Warm water
- 1 1/4 cups Granulated sugar
- 3/4 cup invert sugar, available at Sugarcraft, not available at grocer
- 3/8 cup Light Karo
- 1/2 teas Vanilla
