Crispy Green Beans (PF Chang style)

- Optional dipping sauce:
- 1/2 lb fresh green beans, trimmed
- 1 cup water
- 1 egg
- 1/4 cup milk
- 1-2 cups seasoned bread crumbs
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/5 tsp salt
- 1 cup all-purpose flour
- Vegetable shortening/oil for frying
- 2 tbsp bottled ranch dressing
- 1 tbsp milk
- 1 tsp cider vinegar
- 1/4 tsp wasabi powder, optional
Almond Streusel Baked Pears

Heat oven to 350 F. Spray 13-by-9-inch metal baking pan with cooking spray
- Cooking spray
- 1 (8 ounce) container plain nonfat yogurt
- 2 tablespoons honey
- 1 cup oats (quick or old-fashioned, uncooked)
- 1/2 cup firmly packed brown sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground allspice or pumpkin pie spice
- 6 tablespoons 70% vegetable oil spread, softened
- 2 tablespoons slivered almonds
- 4 large, firm-ripe pears, washed (do not peel)
Amarillo Vegetable Kabobs with Poblano Quesadillas

Marinade: In large bowl, mix ingredients until blended
- Marinade:
- 1/4 cup minced scallions
- 1/4 cup peanut oil
- 3 lime slices
- 2 cloves garlic, peeled, slightly crushed
- 1 bay leaf
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp salt
- 1 tbsp fresh lime juice
- Vegetables:
- 1 red pepper, seeded and cut into large chunks
- 1 yellow pepper, seeded and cut into large chunks
- 1 orange pepper, seeded and cut into large chunks
- 1 small (4 ounce) zucchini, cut into 8 (1/2-inch thick) slices
- 1 small (4 ounce) yellow squash, cut into 8 (1/2-inch thick) slices
- 4 large jalapenos, halved lengthwise, seeded
- 2 large ears corn, husked, quartered crosswise
- 8 (5 ounces) mushroom caps
- 4 scallions, trimmed, cut into 2 1/2-inch lengths
- Quesadillas:
- 8 (7 inch) flour tortillas
- 1 1/3 cups (6 ounces) shredded Monterey Jack cheese
- 1 poblano chili, roasted, peeled, seeded and diced, or 1/2 cup canned diced green chiles

Cranberry Festival Cake

Cream shortening and sugar until light and fluffy
- 1/2 cup shortening
- 1 cup sugar
- 1 egg
- 2 cups sifted all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp vanilla
- 3/4 cup milk
- 1 cup halved fresh cranberries
Vegetarian Cassoulet

- For the cassoulet:
- 3 medium leeks (white and pale green parts only)
- 4 medium carrots, halved lengthwise and cut into 1-inch-wide pieces
- 3 celery ribs, cut into 1-inch-wide pieces
- 4 garlic cloves, chopped
- 1/4 cup olive oil
- 4 thyme sprigs
- 2 parsley sprigs
- 1 Turkish or 1/2 California bay leaf
- 1/8 teaspoon ground cloves
- 3 (19-ounce) cans cannellini or Great Northern beans, rinsed and drained
- 1 quart water
- For garlic crumbs:
- 4 cups coarse fresh bread crumbs from a baguette
- 1/3 cup olive oil
- 1 tablespoon chopped garlic
- 1/4 cup chopped parsley
