- 3 Tbsp chopped fresh parsley
Scrambled Mexican Tofu

- 3 cups egg whites, about 24 eggs' worth
- 1/2 pound soft tofu
- 3 tbsp soy sauce
- 1 tsp turmeric

- 1 fresh tomato, peeled, seeded, and diced
- 1/2 cup diced onions
- 2 garlic cloves, minced
- 2 tbsp chopped roasted green chili
- 1/8 tsp ground cumin

- 1/2 tsp. kosher salt
- 3 sticks unsalted butter, cut into 1/2-inch cubes and chilled

"Mixed Vegetable Grill takes about 25 minutes to prepare and another 25 minutes to grill
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- Juice of 1 lemon
- Juice of 1 orange
- Salt, to taste
- Pepper, to taste
- 1 pound summer squash (use various colors)
- 2 bell peppers (use different colors), stemmed and deribbed
- 2 sweet onions, peeled and quartered through stem
- 4 portobello mushrooms, stemmed
