Lentils and Rice with Caramelized Onions

- 3 tbsp olive oil
- 1 medium onion, chopped, plus 1 large or 2 medium onions, halved and sliced
- 1 tsp minced garlic
- 1 tsp ground cumin
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 cups lentils washed and picked over
- 6 About 6 cups chicken, beef, or vegetable stock, or water, warmed
- 1 cup long- or short-grain rice
- Minced fresh parsley leaves for garnish

Blackberry Jelly

- 4 cups torn turnip greens, blanched

- 1 cup heavy cream
- 2/3 cup Guinness stout
- 2 tbsp plus 2 tsp molasses
- 3 extra-large egg yolks
- 1/3 cup granulated sugar
- 1/2 tsp pure vanilla extract
