No Cook Apricot Jam

Fully crush apricots, one layer at a time
- 2 1/4 pounds ripe apricots, peeled and thinly sliced
- 5 1/2 cups sugar
- 1 cup light corn syrup
- 1/4 tsp ascorbic acid crystals
- 2 pouches (3 ounces each) liquid fruit pectin
- 1/3 cup lemon juice
Sweet Potato Ring with Glaze

- Glaze:
- 4 or 5 medium-large sweet potatoes
- 1 cube margarine
- 3 eggs, separated
- 1 cup brown sugar
- 1 tsp salt
- 2 cups brown sugar
- 1 cube margarine
- 1/2 cup water
Strawberry Spinach Salad

Place salad ingredients in a bowl
- Salad:
- 1 tbsp Mrs Dash Lemon Pepper Blend
- 1/3 lb spinach leaves, washed
- 1/2 pt fresh strawberries, sliced
- 1 kiwi, sliced
- 1 tbsp slivered almonds
- Dressing:
- 1 tsp Mrs Dash Original Blend
- 1 tbsp raspberry preserves
- 1 tbsp vegetable oil
- 1 tbsp rice vinegar
Raspberry Corn Muffins

Preheat oven to 400 F. Grease 12 (2 1/2-by-1 1/4-inch) muffin pan cups
- 1 cup all purpose flour
- 1 cup yellow cornmeal
- 1/2 cup sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 tsp vanilla extract
- 1 large egg
- 1 1/4 cups raspberries or 1 1/2 cups blueberries
Festive Summer Spinach Salad

In a jar with a tight-fitting lid, combine the salad dressing, orange juice, honey and paprika; shake well
- 3/4 cup fat-free French salad dressing
- 2 tbsp orange juice
- 2 tbsp honey
- 3/4 tsp paprika
- 6 cups fresh baby spinach
- 1 can (11 ounce) mandarin oranges, drained
- 3/4 cup craisins or dried cranberries
- 1/2 cup sliced fresh mushrooms
- 1/2 cup cubed avocado
- 3 slices red onion, separated into rings
- 1/4 cup crumbled cooked bacon
- 1/4 cup chopped walnuts, toasted
Lemon Muffin Cakes or Loaf

Preheat oven to 350 F. Grease muffin tin or loaf pan
- For the cake:
- 1 cup canola oil
- 1 cup sugar
- 1 cup brown rice flour
- 1/4 cup potato starch
- 3 tbsp tapioca flour
- 1 tbsp cornstarch
- 1 tsp xanthan gum
- 2 tsp baking powder
- 4 eggs, beaten
- Grated rind and juice from one lemon
- For the drizzle:
- 1/3 cup sugar

Lemon-Herb Baby Red Potatoes and Asparagus

Boil potatoes in water for 20 to 30 minutes, or until almost tender
- 1 pound small red potatoes (if using large, halve potato then quarter)
- 1 pound fresh asparagus spears
- 1 tbsp butter or margarine, melted
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp snipped fresh chives (or 1 tsp dried)
- 1 tbsp snipped fresh parsley (or 1 tsp dried)
- Salt to taste
- Pepper to taste
