- Egg substitute equivalent to 1 egg
- 1/4 cup skim milk
- 3 cups mashed potatoes
- 1 tbsp onion, finely chopped
- 1 tbsp chopped fresh parsley
- 2 cups lowfat cheese, cubed
- 3 egg whites
No Cook Peach Jam

- 2 1/4 pounds ripe peaches, peeled and thinly sliced

- 1 (15 ounce) can pinto beans, or 1 1/2 cups cooked dry-packaged pinto beans, rinsed, drained
- 1 (15 ounce) can black beans, or 1 1/2 cups cooked dry-packaged black beans, rinsed, drained
- 3/4 teaspoon dried thyme leaves
- 1 bay leaf
- 1 1/2 to 2 teaspoons salt
