Perfect Peanut Sauce

Combine all ingredients with a whisk in a small bowl, adding the water last
- 1/4 cup peanut butter (natural, no sugar added kind)
- 2 teaspoon soy sauce
- 1 Tablespoon brown sugar
- 1 Tablespoon fresh lemon or lime juice
- 1/4 cup coconut milk (lite is fine, if you prefer or substitute water)
- 1/4 cup water
- red chili flake to taste
- chili garlic sauce to taste or 1 clove crushed garlic
Chicken Satay

Combine the yogurt, ginger, garlic, and curry powder in a shallow mixing bowl, stir to combine
- 1 cup plain yogurt
- 1 teaspoon freshly grated ginger
- 1 teaspoon minced garlic
- 1 tablespoon curry powder
- 1 1/2 pounds skinless, boneless chicken breasts, cut into strips
- 20 wooden skewers, soaked in water 30 minutes
- Vegetable oil, for grilling

- 1 * 1 cup fresh lime juice (about 8 limes)
- 2 * 2 teaspoons black pepper
- 2 * 2 teaspoons dried oregano
- 2 * 2 teaspoons ground cumin
- 1 1/2 * 1 1/2 teaspoons salt
- 6 * 6 garlic cloves, crushed
- 2 * 2 pounds pork tenderloin
- 1 1/2 * 1 1/2 teaspoons olive oil
- * Cooking spray
- 1/4 * 1/4 cup coarsely chopped fresh cilantro
- 2 * 2 tablespoons finely chopped green onions
