Chicken Stock

Throw all ingredients into a large stockpot or slow cooker
- 5 # chicken, cut into small parts
- 5 - 6 quarts cold water, or enough to cover chicken
- 1 large onion, peeled and cut into chunks
- 2 medium carrots, cleaned and cut into chunks
- 2 stalks celery, cleaned and cut into chunks
- 2 bay leaves
- 3 sprigs fresh thyme
- 10 whole peppercorns
- handful fresh parsley, twisted to release extra flavor
- 2 cloves garlic, peeled and smashed
Roasted Tomato Soup

Preheat oven to 400. Place on a roasting pan, tomatoes, garlic, onion, basil, parsley and tarragon
- 10 - 12 plum tomatoes, halved
- 8 cloves garlic, peeled
- 2 onions, peeled and quartered
- small handful fresh basil, parsley and tarragon
- EVOO
- kosher salt and fresh ground pepper
- 10 c. chicken stock
- bay leaf
- 2 T. butter
- 1/2 c. heavy cream
Sweet Potato and Black Bean Burritos

Preheat oven to 350 degrees F
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups canned black beans, drained and mashed
- 1 cup water
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 2 teaspoons prepared mustard
- 1 pinch cayenne pepper, or to taste
- 2 tablespoons soy sauce
- 2 cups cooked and mashed sweet potatoes
- 6 (10 inch) flour tortillas, warmed
- 8 ounces shredded sharp Cheddar cheese
- PAM

- salsa
Spicy-n-Sweet Chicken-n-Ribs

Put the chicken and ribs in an extra large Ziploc bag (or baking dish)
- 12 chicken thighs, skin and bone still on
- 12 pork spare ribs
- 1 c. apple cider
- 1/4 c. maple syrup
- 2 T. vegetable oil
- 3 T. soy sauce
- 3 T. Worchestershire sauce
- 3 T. sriracha sauce, or to taste
- 1 cinnamon stick
- 6 cloves garlic, chopped
Lattice Topped Apple Pie

Pastry: In a large mixing bowl, sift together flour and salt
- Pie:
- Cream Short Pastry
- 2 1/4 cups (about 12 oz.) all-purpose flour, plus extra for working dough
- 1/2 teaspoons fine salt
- 1 1/2 sticks (12 Tbsp) unsalted butter, cut into 1-in. pieces and chilled
- 1 large egg, lightly beaten
- 1/2 cup sour cream
- 2 pounds Granny smith apples
- 1 pound McIntosh apples
- 1/3 cup plus 1 tsp. granulated sugar, divided
- 1/3 (packed) cup light brown sugar
- 2 teaspoons lemon zest, finely minced
- 1 tablespoon lemon juice, freshly squeezed
- 1 teaspoon cinnamon, ground
- 1/8 teaspoon nutmeg, freshly ground
- 1 teaspoon vanilla extract
- 1/8 teaspoon fine salt
- 1/2 cup walnuts, chopped and lightly toasted
- 2 tablespoon unsalted butter
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 tablespoons egg wash (1 egg beaten with 1 Tbsp. water)
Mediterranean Turkey Patties

Mix all ingredients together in a bowl
- 1 # ground turkey
- 1/2 c. crumbled feta cheese
- 1 tsp. dried Italian seasoning
- 1 tsp. dried oregano
- 1 tsp. grill seasoning (Montreal Steak)
- 1/2 tsp. garlic powder
- 1/2 tsp. kosher salt
- 1/2 tsp. fresh ground pepper
- 3 T. EVOO
Gingerbread Cake with Cream Cheese Icing

Cake: Preheat oven to 350 degrees F (175 degrees C)
- Cake:
- 1/2 cup white sugar
- 1/2 cup butter
- 1 egg
- 1 cup molasses
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 cup hot water
- Frosting:
- 8 oz. pkg. cream cheese, softened to room temp.
- 1/4 c. butter, room temp.
- 1 tsp. vanilla extract or vanilla bean paste
- 2 - 2 1/2 c. sifted confectioners' sugar (depending on how sweet you like your frosting)
Chocolate Stout Bundt Cake

Cake: Generously spray a bundt pan with Baker's Joy, being sure to get into all of the nooks & crannies)
- Cake:
- 1 cup stout (such as Guinness)
- 1 cup (2 sticks) unsalted butter
- 3/4 cup Dutch process unsweetened cocoa powder
- 2 cups All Purpose Flour
- 2 cups granulated sugar
- 1 1/2 teaspoons baking soda
- 3/4 teaspoons salt
- 2 large eggs
- 2/3 cup sour cream
- 1 tsp. pure vanilla extract
- Chocolate Ganache:
- 1 cup (6 ounces) chopped semi-sweet chocolate or chocolate chips. ( Hershey's Special Dark chocolate-it gives you a dark chocolate flavoring, without the bitterness.)
- 1/2 cup (4 ounces) plus 1 TBSP. heavy cream
- 1 T. Godiva milk chocolate or white chocolate liquor or Kahlua, Bailey's etc.
Remolaude Sauce

Place all ingredients in a food processor and mix until completely blended
- 1 c. mayo
- 1/4 c. chii sauce
- 2 - 3 T. Dijon mustard
- 1 T. Old Bay
- 2 T. lemon juice
- 2 tsp. Worchestire sauce
- 1 large shallot, chopped
- 2 T. fresh parsley, roughly chopped
- 1 clove garlic, peeled and smashed
- 1 tsp. chili powder
- 1/2 tsp. kosher salt
- 1/2 tsp. fresh ground pepper
Corn Fritter Casserole

Preheat oven to 375 degrees
- 3 Tablespoons unsalted butter softened
- 3 large egg whites
- 1 8 oz. package 1/3 less fat cream cheese, softened
- 3/4 cup finely chopped sweet onion
- 3/4 cup chopped red bell pepper (or a spicier pepper if you like heat)
- 1 (15 1/4 ounce) can sweet whole kernel corn, drained
- 1 (14 3/4 ounce) cream style corn
- 1 (8 1/2 ounce) package corn muffin mix, such as Jiffy
- 1/4 teaspoon freshly ground black pepper
