Company's Coming Salad

Dressing: In a medium bowl, mix all ingredients together
- Dressing:
- 3/4 c. light mayo
- 3 T. light sour cream
- juice of 1/2 lemon
- 1/2 tsp. Jane's crazy salt
- 1 tsp. garlic powder
- 8 oz. Gorgonzola
- 2 T. red wine vinegar
- 1 T. nonfat buttermilk
- fresh ground pepper, to taste
- Salad:
- 4 c. arugula
- 1/2 red onion, sliced thin
- 1 red pepper, sliced
- 1/2 English cucumber, sliced
- 1 c. toasted pecans, chopped roughly
Buffalo Chicken Dip

Melt cream cheese and dressing in a pot over low heat, or in the microwave
- 2 (8 ounce) packages cream cheese
- 1 cup chunky blue cheese dressing or ranch dressing
- 3/4 cup monterey jack cheese, shredded
- 3/4 cup cheddar cheese, shredded
- 3 cups cooked chicken, shredded
- 3/4 cup your favorite wing sauce or hot sauce (we like Frank's)
- tortilla chips, Triscuits, carrot sticks, celery sticks, cucumber slices, pepper strips for dipping
Caramelized Onion Kugel

Preheat oven to 350. Spray a 9 X 13 baking dish with non stick spray and set aside
- 10 oz. extra wide egg noodle, cooked al dente in salt water and drained
- 4 # sweet onions
- 4 T. canola oil
- 12 eggs
- 1 c. butter
- kosher salt and fresh ground pepper, to taste
Greek Salad Dressing

Place all ingredients in a small jar and shake
- 1/2 c. EVOO
- 1 1/4 tsp. each garlic powder, dried oregano, dried basil
- 1 tsp. each pepper, salt, onion powder, Dijon mustard
- 2/3 c. red wine vinegar

In a food processor combine the flour, and 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt, plus 1/2 teaspoon
- 3 tablespoons butter, cut into small pieces
- 1 1/2 tablespoons lemon juice
- 1/2 cup mascarpone cheese
- 3 tablespoons ice water
- 2 ounces diced pancetta
- 1 teaspoon chopped fresh thyme (or rosemary, oregano, parsley, or a combination)
- 1 1/2 to 2 cups leftover side dish vegetables (like sauteed mushrooms and shallots)
- 1/2 cup grated cheese (try a combo of smoked mozzarella and fontina)
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons freshly grated Parmesan
- 1 large egg, lightly beaten
Nutella Frozen Yogurt

Whisk together yogurt, milk and hald-and-half until smooth
- 2 c. Greek non-fat plain yogurt
- 1/4 c. skim milk
- 1/2 c. half-and-half
- 1 c. Nutella
Sausage Stuffed Mushrooms

Preheat the oven to 325 degrees F
- 16 extra-large white mushrooms
- 5 tablespoons good olive oil, divided
- 2 1/2 tablespoons Marsala wine or medium sherry
- 3/4 pound sweet Italian sausage, removed from the casings
- 6 scallions, white and green parts, minced
- 2 garlic cloves minced
- 2/3 cup panko crumbs
- 5 ounces mascarpone cheese, preferably from Italy
- 1/3 cup freshly grated Parmesan
- 2 1/2 tablespoons minced fresh parsley leaves
- Salt and freshly ground black pepper
Apple Banana Bread

Preheat oven to 350 deg F
- Cake Ingredients:
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 3 tablespoons sour cream
- 2 ripe bananas, mashed
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 apples, cored and chopped
- 1/2 cup pecanss, Chopped
- Optional Praline Glaze Ingredients:
- 1/2 c. brown sugar
- 1/2 c. butter
Fried Green Tomatoes

In a large bowl, combine the cornmeal and bread crumbs
- 4 green tomatoes, sliced
- 1 egg
- 2 T. milk
- kosher salt and fresh ground pepper
- 1/2 c. yellow cornmeal
- 1/2 c. Italian seasoned bread crumbs
- canola oil for frying

- 1 box plain white cake mix
- 1 cup whole milk
- 1 stick butter, melted
- 3 large eggs
- 2 tsp. pure vanilla extract
- 1 stick of butter
- 1 cup packed brown sugar
- 1/4 cup whole milk
- 2 cups confectioner’s (powdered) sugar, sifted
- 1 tsp. pure vanilla extract
