Fudge Melt-A-Ways

Melt butter and 1 square unsweetened chocolate
- 1/2 c. butter
- 4 square unsweetened chocolate
- 1/4 c. granulated sugar
- 1 tsp. vanilla
- 1 beaten egg
- 2 c. graham cracker crumbs
- 1 c. coconut
- 1/2 c. chopped nuts
- 1 T. milk
- 1/4 c. butter
- 2 c. sifted powdered sugar
- 1 tsp. vanilla
Broccoli Quiche

Preheat oven to 375 degrees
- 1-9 " pie shell
- 1-10 oz pkg frozen chopped broccoli
- 8 oz fresh mushrooms, thinly sliced
- 1 c. milk
- 3 eggs, beaten
- 2 T. margarine, melted
- 1 T. flour
- 1 tsp. salt
- 1/2 to 1 tsp. pepper
- 1 c. shredded Cheddar cheese, divided
Yummy Potatoes

Cube potatoes into large casserole dish, layering in butter, onion powder, garlic powder, salt and pepper
- 9 or 10 potatoes, peeled
- 1 pt heavy cream
- 1 pt half and half
- 2 c. shredded Cheddar cheese
- 1/2 stick butter
- 1 T. onion powder
- 1/2 T. garlic powder
- Salt and pepper
Pea Salad

Mix all ingredients together and serve
- 1 (10 oz) pkg frozen peas, thawed
- 1 c sweet onions or green onions chopped
- 1 c cashews or peanuts, chopped slightly
- 1/2 c sour cream
- 1 c reanch salad dressing
- 1/2 to 1 pkg crumbled cheese
Crazy Crust Pizza

Heat oven to 425. In skillet, brown ground beef or sausage, seasoning to taste
- Batter:
- 1 1/2 lbs. ground beef or sausage or 1 c. thinly sliced pepperoni sausage
- 1 c. flour
- 1 tsp. Italian seasoning or oregano
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 eggs
- 2/3 c. milk
- Topping:
- 1/4 c. onion, chopped
- 1 (4-oz.) can well drained mushroom stems & pieces
- 1 c. pizza sauce (or 8oz. tomato sauce)
- 1 c. (4 oz.) shredded cheese

- 3 lg. onions
- 3 red peppers
- 2 1/2 c. cider vinegar
- 1/2 c. salt
- 3 c. sugar
- 1 tsp. black pepper
- 3 c. chopped apples
- 2 tsp. cloves
- 2 tsp. allspice
- 2 tsp. ginger
- 2 tsp. cinnamon
- 2 tsp. nutmeg
- 1 tsp. red pepper (hot)
Amanda's Burning Hot Dot Topping

- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 c. vegetable oil
- 2 sm. jars plum baby food
- 2 c. sugar
- 1 tsp. cinnamon (opt.)
- 1/2 tsp. ground cloves
- 1/3 oz. red food coloring
- 3 eggs
- 1 c. chopped pecans or walnuts
- 1 c. powdered sugar
- 2 to 3 tsp. lemon juice
Peanut Brittle

Use Candy Thermometer. Cook syrup, sugar, and water to 250 degrees
- 2 c. sugar
- 1/2 c. water
- 1/2 tsp. vanilla
- 2 c. raw peanuts
- 1 c. white corn syrup
- 1 T. butter/margarine
- 2 tsp. soda
