Pecan-Pie Muffins

Combine peans, brown sugar and flour in a large bowl; make a well in center of mixture
- 1 cup chopped pecans
- 1 cup firmly packed brown sugar
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup butter, melted
Monterey Chipolte Hash Browns

Heat oven to 350. Spray shallow 1 1/2 quart casserole or gratin dish with nonstick cooking spray
- 1 bag (20 oz) refrigerated hashbrown potatoes
- 1 cup shredded Monterey Jack cheese (4 oz)
- 1/2 cup sliced green onions
- 1 1/4 cups milk
- 2 chipolte chilies in adobo sauce, finely chopped (from 7 or 11 oz can)
- 2 tsp adobo sauce from can
- 2 garlic cloves, minced
- 1/2 tsp seasoned salt
- 1/4 tsp pepper
Blueberry Cream Muffins

Preheat oven to 400. Grease 24 muffin cups or line with paper muffin liners
- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 tsp vanilla extract
- 4 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 2 cups sour cream
- 2 cups blueberries

- TOPPING:
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1 cup buttermilk
- 1/2 cup butter, melted
- 1 tsp vanilla extract
- 1 1/2 cups packed brown sugar
- 2 cups diced apples
- 1/2 cup packed brown sugar
- 1/3 cup all-purpose flour
- 1 tsp ground cinnamon
- 2 Tbsp butter, melted
Krispy Kreme Doughnut Bread Pudding

Cut the doughnuts into small chunks and place in large mixing bowl
- GLAZE:
- 2 dozen glazed Krispy Kreme doughnuts
- 3 eggs, beaten
- 1 can sweetened condensed milk, add to eggs and beat together
- Vanilla flavoring to taste, added to egg mixture 1 tsp or more
- 1/2 stick melted butter
- cinnamon to taste
- 1 cup chopped pecans
- 2 cups confectioners' sugar
- 3 to 4 Tbsp milk or water
Breakfast Patties

- 2 lbs lean ground turkey
- 1 1/2 tsp salt
- 1 tsp dried sage leaves
- 1 tsp pepper
- 1/2 tsp ground ginger

Sweet Berry Bruschetta

- 10 slices French bread (1/2 inch thick)

- 6 oz fat-free cream cheese

- 3/4 cup fresh blackberries
- 3/4 cup fresh raspberries

Southwest Sausage Bake

In greased 13x9 inch baking pan, layer half the tortilla strips, chilies, sausage, and cheese
- 6 flour tortillas (10 inches), cut into 1/2 inch strips
- 4 cans (4 oz ea) chopped green chilies, drained
- 1 lb pork sausage, cooked and drained
- 2 cups (8 oz) shredded Monterey Jack cheese
- 10 eggs
- 1/2 cup milk
- 1/2 tsp each salt, garlic salt, onion salt, pepper, and ground cumin

- 2 medium tomatoes, sliced

- 1 pkg (30 oz) frozen shredded hash brown potatoes, thawed
- 2 cups (8 oz) shredded cheddar cheese
- 1 large onion, chopped
- 1 medium green bell pepper, chopped
- 1 cup cubed fully cooked ham
