- 2 tablespoons butter
- 1 onion, peeled and chopped
- 2 carrots, peeled and chopped
- 2 cloves garlic, chopped
- 1 15-ounce can cannellini (white) beans, drained and rinsed
- 1 28-ounce can crushed tomatoes
- 3 cups chicken broth
- 1 bay leaf
- 1 sprig of fresh rosemary, plus 1 teaspoon, minced
- 1/2 teaspoon red pepper flakes
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2/3 cup creme fraiche
- Zest of one lemon
Tomato Soup with Pancetta

Heat the oil in a heavy large pot over medium heat
- 1 tablespoon olive oil
- 3 ounces pancetta, chopped
- 1 small onion, chopped
- 3 (3/4-inch-thick) slices rustic rye bread (each about 5 3/4 by 3 3/4 inches), cubed
- 6 cups canned low-salt chicken broth
- 1 (28-ounce) can diced tomatoes with juices
- 1/4 cup coarsely chopped fresh basil leaves
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried crushed red pepper flakes
- Salt and freshly ground black pepper
- 1/4 cup mascarpone cheese
- 1/4 cup sour cream

Chicken and Egg Soup with Pastina

Heat the 1/4 cup olive oil in a large pot over high heat
- 1/4 cup extra-virgin olive oil
- 1 small onion, finely chopped
- Kosher salt and freshly ground pepper
- 1/2 (2 1/2-to-3-pound) rotisserie chicken (on the bone)
- 2 cups low-sodium chicken broth
- 2 lemons
- 1/2 cup pastina (small pasta)
- 2 large eggs plus 2 egg yolks
- 2 cups baby spinach or other baby greens
- 1/4 cup chopped fresh dill
- Crumbled feta cheese, for garnish (optional)
Couscous with Pine Nuts

Melt the butter in a large saucepan
- 4 tablespoons (1/2 stick) unsalted butter
- 3/4 cup chopped shallots (3 to 4 shallots)
- 3 cups chicken stock, preferably homemade
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 cups couscous
- 1/2 cup toasted pine nuts (pignolis)
- 1/4 cup dried currants
- 2 tablespoons chopped fresh flat-leaf parsley
Apricot Couscous

- Extra-virgin olive oil
- 1 small red onion, small dice
- 1/4 cup dried apricots, coarsely chopped
- 1/4 cup whole almonds toasted, coarsely chopped
- 1 cup couscous
- 1 1/2 cups chicken stock, warm
- 1/2 teaspoon lemon zest
- 2 scallions green parts only
- 1/4 cup fresh mint leaves, roughly chopped
- 1/2 bunch fresh cilantro leaves, roughly chopped plus leaves for garnish

- 1 1/2 cups couscous
- 1 tablespoon unsalted butter
- 1 1/2 cups boiling water
- 1/4 cup plain yogurt
- 1/4 cup good olive oil
- 1 teaspoon white wine vinegar
- 1 teaspoon curry powder
- 1/4 teaspoon ground turmeric
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 cup small-diced carrots
- 1/2 cup minced fresh flat-leaf parsley
- 1/2 cup dried currants or raisins
- 1/4 cup blanched, sliced almonds
- 2 scallions, thinly sliced (white and green parts)

- 1 pint fresh strawberries, hulled and sliced
- 1 1/2 cups sugar
- 3 half-pints fresh raspberries, divided
- 2 half-pints fresh blueberries
- 2 tablespoons framboise (raspberry brandy)
- 1 loaf brioche or egg bread (1 to 1 1/2 pounds)
- 1 cup (1/2 pint) cold heavy cream
- 3 tablespoons sugar
- 1/2 teaspoon pure vanilla extract
- 1 tablespoon dark rum
- Whip the cream in the bowl of an electric mixer fitted with the whisk attachment. When it starts to thicken, add the sugar, vanilla, and rum. Continue to whip until it forms stiff peaks. Serve cold.
