Blackberry Prosecco Popsicle Recipe

1. Place blackberries in a bowl and pour crème de cassis on top and toss to coat
- Makes 12 2.5oz popsicles
- 20 oz Prosecco
- 1/3 cup of blackberries
- 4 oz crème de cassis
- Splash of fresh lime juice
- 2 pinches of lime zest
Osso Bucco with Toasted Pine Nut Gremolata

Season the shanks all over with salt and pepper
- 4 Veal Shanks, cut 3 inches thick (about 3 ½ to 4 pounds)
- Salt and Pepper
- 6 tablespoons extra-virgin Olive Oil
- 1 medium Carrot, chopped into ¼-inch-thick coins
- 1 small Spanish Onion, chopped into ½-inch dice
- 1 Celery stalk, chopped into ¼-inch slices
- 2 tablespoons chopped fresh Thyme leaves
- 2 cups Basic Tomato Sauce (recipe below)
- Risotto Milanese
- 1/4 cup extra-virgin olive oil
- 1 medium onion, cut into 1/4-inch dice
- 1 teaspoon saffron threads
- 8 cups chicken stock, hot
- 1 1/2 cups arborio rice
- 1/2 cup white wine
- 4 tablespoons (1/2 stick) unsalted butter
- 1/2 cup freshly grated Parmigiano-Reggiano, plus more for sprinkling
- 2 cups Chicken Stock
- 2 cups dry White Wine
- 1 recipe Risotto Milanese (recipe below)
- 1 recipe Gremolata
- Preheat oven to 375 degrees
Ginger Snaps with Fresh and Candied Ginger

350F Cream the butter and brown sugar until fluffy
- 1 1/2 C Unsalted butter
- 2 C Packed brown sugar
- 1/2 C Molasses
- 2 Eggs
- 4 1/2 C Unbleached all-purpose flour
- 4 t Ground ginger
- 4 t Baking soda
- 1 t Salt
- 3 T Grated fresh ginger
- 1 C Chopped crystallized ginger
Pumpkin Pie

350F Whisk the eggs and the brown sugar in large mixing bowl
- 3 Large Eggs
- 1/2 C Firmly packed light brown sugar
- 1/2 C Karo Syrup (light)
- 1 1/2 Heavy whipping cream
- 1 1/2 C Puree Pumpkin
- 1 T Rum
- 1/2 t Salt
- 1 t Cinnamon
- 3/4 t Ground ginger
- 1 10-inch pie shell
